Those are some good eggs! As someone who kept chickens, the color of the shell doesn't matter one bit. It's all about what you feed the chickens. A rougher surface to the shell indicates they are getting good calcium and mineral intake, and a darker yolk is also indictive of being fed a nutritious balanced diet. Our home raised chickens eggs were far tastier than anything you can get at the grocery store.
This is why I started buying cage-free eggs at the supermarket years ago. The yolks are thick, delicious, and deep orange color. No more pale yellow yolks from factory farmed eggs that have no flavor. Hens who live happily and eat healthy food lay much tastier eggs! ❤️

dude, unsaturated vegetable oil is healthy and decreases the risk of atherosclerosis. On the other hand saturated animal fats (in pork for example) are really bad for your heart and blood vessles. So this recipe is correct. A bit of animal fat for flavor and plenty of veggy oil for health

I actually attempted to make an omelette the other day with some water in the egg mix (helps to uniformly dissolve the seasonings) but I put too much water so when I was trying to scrape the bottom to flip, it fell apart easily like scrambled eggs. This explains it 👍
If you want more "delicate", fluffier scrambled eggs add a little milk. It is also a rescue to your scrambled eggs if you overcook them and they get too dry.

I grew up on a pig farm pork is not a big thing for me. Maybe once or twice a year! Bacon is about the only pork I eat and that's about once a month! I eat pretty cosher!

Definitely sounds much better for me. I feel that these eggs cooked this way if you wanted to cook just eggs and did not include all the meat and veggies would be essentially flavorless. Perhaps a great moisture and texture, but taste like nothing. Cooking in a stock should be extra tasty.

Sometimes the inside egg touches your fingers cracking it on its way into the pan, and if the eggs are farm fresh or natural they usually have dirt/poop on it, so you’re contaminating your food if you don’t wash the egg shell first. I’m not sure if this method is required of store bought eggs but 100% recommend washing fresher eggs.

I usually always add a little water to steam my scrambled eggs for a fluffy light texture but have never contemplated poaching fully in simmering water. I would think it would soak up too much water and become soggy. I have been taught to believe one should never "boil" eggs it is too harsh for the delicate nature of an egg. Egg protein coagulate around 145-150F; boiling water occurs at 212F. A good simmering temperature of 160-180F is perfect. I'm my country "boiled" eggs are very common but I dislike that expression; almost as much as I do when people use margarine and butter interchangeable they are 2 very distinct and different products 😆

That's the way I do it bc I cannot stand the smell of browned egg . So the water keeps it from browning. I don't use as much water as she did though

I'm my country "boiled" eggs are very common but I dislike that expression; almost as much as I do when people use margarine and butter interchangeable they are 2 very distinct and different products 😆
Thanks so much Big Sister. My baby like the egg. If I fry it with butter he usually doesn't like it because it is more dry and hard. This way the scramble egg is more soft and I can add Dashi powder to the water which is his favourite flavour. Thank you so much. Bless you.
