INGREDIENTS
Fox nuts - 20 grams
Warm water - 200 milliliters
Paneer - 200 grams
Gram flour - 50 grams
Onions - 60 grams
Grated carrots - 60 grams
Bell pepper - 60 grams
Green chili - 1 tablespoon
Salt - 1 teaspoon
Red chili - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Cumin powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Coriander - 1 tablespoon
Coriander - 4 grams
Mint leaves - 2 grams
Green spring onions - 10 grams
White spring onions - 20 grams
Ginger - 1 teaspoon
Green chili - 1 tablespoon
Cumin seeds - 1/2 teaspoon
Salt - 1/2 teaspoon
Chaat masala - 1/2 teaspoon
Lemon juice - 1 teaspoon
Water - 2 tablespoons
Oil - for fry
PREPARATION
1. In a bowl, add 20 grams fox nuts, 200 milliliters warm water and soak for 10 minutes. Strain it.
2. On a board, place 200 grams paneer and grate them with the help of food grater.
3. Take a pan, add 50 grams gram flour and dry roast for 2 - 3 minutes. Remove it from heat.
4. In a bowl, add grated paneer, 60 grams onions, 60 grams grated carrots, 60 grams bell pepper, roasted gram flour, soaked fox nuts, 1 tablespoon green chili, 1 teaspoon salt, 1/4 teaspoon red chili, 1/4 teaspoon black pepper, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1 tablespoon coriander and knead it into a dough.
5. Take some mixture in your hands and shape it into a tikki.
6. Place it on a plate and refrigerate for 15 - 20 minutes.
7. In a blender, add 4 gram coriander, 2 grams mint leaves, 10 grams green spring onions, 20 grams white spring onions, 1 teaspoon ginger, 1 tablespoon green chili, 1/2 teaspoon cumin seeds, 1/2 teaspoon salt, 1/2 teaspoon chaat masala, 1 teaspoon lemon juice, 2 tablespoons water and blend it well.
8. Heat sufficient oil in a pan and shallow fry tikki until it turns golden brown in color from all sides.
9. Remove it from heat and drain it on an absorbent paper.
