    I'm only 11 but my grandma is teaching me and my 3 brothers to cook and bake. I have been with my gramma since I was 6 months old. My dad is a drug addicts and lives with his mom stealing everything from her. My mom is in prison and has 3 or 4 more years.
    So this is why I am learning to cook and bake. My gramma says that I will never starve if I can cook. I want to be a doctor but I have chronic ADHD so I might end up being a master chef (that's what gramma called you) just like you.
    She said when a person can cook and bake just by smell, taste, and hearing that is when he/she has mastered whatever it is they are baking or cooking.
    My gramma can tell when her walnuts are toasted by smell, or when her cookies are done, or when her pie dough is ready for cold water, gramma says it's in the touch; and, you have the touch.

God will always have you and your siblings in His care. I can tell your grandmother is an Awesome Person. Listen to all she tells you and help her in all that she does for y’all.       Jesus the cool.. Sweetheart, your gran is teaching you to be self-reliant and independent. My parents had to work, so, I learned how to cook at 11 yrs. old, too. By the time I was 15, I could cook a Thanksgiving dinner by myself. I watched my aunts, grandmother and my mom when she was off from work. God Bless you. I know you will do well, dear child. You are NOT defined on where you start in this world, it's where you finish. And sometimes roses can come from weeds. So take care, dear 🌹 rose.

    Miss Chris, I found your U-Tube video's by accident, but I'm glad I did. I like the way you explain your recipes, they sound so simple and clear. I do a lot of cooking and I am always looking for better tips as well as different recipes. I can hardly wait to try your BBQ sauce, on my baby back ribs. Also I plan on trying all your recipes -. Good old Southern cooking.

    Thank you so much for your attention to details, Chris! I'm 69 years old and stopped trying to fry chicken in my 20"s since it was a waste of time and money and extremely dangerous with all the popping and splattering. With your detailed instructions ("listen for that rain") I finally delivered southern fried chicken as tasty as my mama used to make. My husband was floored! Better than anything we can buy locally, better than most any place I've ever been. You are the best teacher ever to patiently lead this "old school cook" to make fried chicken as good as mama's.       This gives me hope...I too,. stopped trying to fry chicken in my 20's,,instead going to mommas every Sunday for my fried chicken fix...Shes passed now and its been years since ive had some good homemade fried chicken! Colonel Sanders is my go to...or shake and bake...but I AM going to try this.,.My Boyfriend has learned that that is my one kitchen failure and he doesn't ask for it anymore...hoping I can surprise him and myself!

      U can use the leftover flour that's at the bottom of the skillet to make gravy. My Mama's homemade gravy. The best.🐔🐔🐣🐣

    The buttermilk makes it so tender and juicy my auntie taught me this over 40 yrs ago. I also use it to cook my homemade French fries they come out nice and crispy never soggy. I'm really enjoying watching your videos too I love to cook my husband is always bragging about how good my cooking is but you can always learn from others, thank you so much for sharing.

    Oh my Lord, does this take me back. I remember being in the kitchen with my mother (from the deep south) on Saturday, helping her cook for Sunday dinner. After church she would put on her house coat, go in the kitchen and heat up the food while humming gospel hymns. She would fry her chicken in a cast iron skillet using lard or Crisco. Just before the chicken turned golden brown she would add butter. This was before butter flavored Crisco came out. Like you she cooked her chicken by sound as well. Love your channel.

    You know how to fry chicken, I fry a mean piece of chicken and I always tell people you fry chicken by sound I flip once when I can not hear my grease sizzling loudly and rapid, I know she is done crispy, golden, not greasy, and oh so good!!!!     Chris yes Ma'am you can cook!!! My mom calls that burnt flour "drugs", because it messes up a good batch of chicken, pork chops whatever you might be frying!!! Kudos for a great instructional video!!! We know whose house everyone comes to to eat dinner!!!Lawd all you need is a good old piece of light bread in the words of my late grandfather!!! I throughly enjoyed this video!!! And I am the family chicken fryer!!!! Blessings to you and your family!!!

    The buttermilk marinade is exactly what my grandma used to do, and since I ALWAYS was in the kitchen watching her, it's how I do my chicken to this day and I am now the grandma!! And we use lard or Crisco, whichever one we have in the house. I want to thank you for your time and effort in making and posting this lovely video, it brought back so many delightful memories!! The grandbabies came in while I was watching and asked me why was I sad, lol it was tears of joy!

    I have a hard hard head. Now I've had people to tell me not to constantly turn my chicken. And I was doing it like that for awhile, but I'd always go back to that habit of flipping it over and over. But this time I didn't, and I tell you I made the best fried chicken. So thanks for showing me to wait, and that it's ok to let it cook on one side and then the other.

    Buttermilk fried chicken is the bomb just like buttermilk cornbread is thee best. My grandmother and my great grandmother always kept buttermilk in their house for cooking with, drinking or using it as one their favorite snacks which was a cold glass of buttermilk with cornbread smashed in it... they loved it!!! That’s why I enjoy watching you Ms. Chris you cook like the cooks in my family ( My Mother who used Lipton onion soup mix on almost everything she cooked, My Grandmother and My great Grandmother!.

    Have Mercy...this lady can evermore cook Chicken. ALL three batches looked FANTASTIC! I love the expression "A medium Rain" That made it Crystal clear for me. I've been cooking MY chicken TOO hot and its dark on the outside and Bloddy on the inside! So 350 and 25 minutes for me from now on. I believe I'd eat a tire IF Ms Chris Battered and Fried it. I also love the way you go step by step in the cooking process, take time to take us through the small steps even by describing the sound of the hot oil as the sound of medium rain falling.     Can you do a video on how you season your cast iron pans/pots, wash them, and how often you season them. Also, how long have you had your cast iron pots. (new cast iron owner myself).

    THANK YOU!!!! I made the fried chicken with buttermilk for dinner yesterday and it was great. I have been trying for years to make good friend chicken and finally, finally, I made some chicken that I liked. I stumbled across your site last year looking for caramel frosting recipe and you are a go-to now for recipes now.       I really enjoy listening to you teach us how to make fried chicken! When I try doing it, it somehow just doesn't seem to come out right, and that is discouraging.     You can make buttermilk with vinegar and regular milk xo love the brown bag method. Works on whole turkey too xo

    THANK YOU for this video and for so thoroughly explaining and demonstrating how to fry chicken! Im 53 years old , and can cook almost anything, but ive ALWAYS failed at frying chicken for some reason.. Its too brown, burnt, too soggy or greasy, the coating falls off or its not done inside etc....I just stopped trying and use shake and bake! LOL My BF has asked and asked ..even bought me a deep fryer so that I can make him fried chicken, but that attempt didn't turn out so well either, but at least it was edible. This makes me want to try again..Much better instructions from you than trying to read a recipe!....Im hoping I can make a reasonable fried chicken using your method~ I have a huge package of drumsticks in the freezer, could I try this just using those? Congrats on the newspaper article!! Im going to check to see if the Roanoke Times has your article in our Sunday paper!

      Harmony Sunshine please try it again. If you do what I do you will get the same results I do. Don't cook it fast 12 to 13 minutes on both sides. Remember listen for the rain sound. No high heat. I would love to know the numbers on your range. I can tell you just about what to set it on. Remember legs will take a little longer. You can do this I really do believe that. Send me feedback. I would also love to know if the article was in your Sunday paper to.

      i will def try it! and ill let you know! I have a nice cast iron skillet and the knobs on my rangetop just have simmer, low,, med, high, and marks in between.'

      Harmony Sunshine Yes I could have used a deep fryer. I do own one. But how would I explain the process to people that have problems with certain parts of frying or people who don't have deep fryers. I want people who watch my channel to understand and learn some things they did not know. I don't know everything about cooking but the knowledge that I do have if it can help someone even if it takes me longer to do something I could finish quicker. I will take the slow road, lol. 😁

      Ms. Chris: The slow road is the lovely road to heavenly food. And listening to you gives me confidence to try to make some of the dishes you prepare. Thank you :-) I didn't know that about legs taking longer to cook also I use to try and use gooey batter to fry with and then the batter would break off (so frustrating!)...so I will try to marinade and then dredge in flour next time I try to fry.

    Hi Chris, I'm embarrassed to admit I never knew why people soaked chicken in milk. Tried it for the first time and that chicken almost melted in my mouth. I've learned so much from your videos for example my black-eyed peas are off the chain...thanks to you I know how to remove the rotten ones and cook them. Your videos definitely gives that "back at home feeling" for real. Thanks for what you do. Evelyn

    Thank you @chriscook4u2 I see instantly what my problem was. "Hearing that sound" let's me know my fire was too high. Dark on the outside not all the way cooked on the inside. I never pan fry b/c of that reason. I can't wait to try your method. Thank you.

    Ok listen when I tell you…. I’ve tried MANY times to make fried chicken! It’s my FAVORITE!!! It either was NEVER done or not done with breading falling off. I decided to give your technique a try….. OMG I FINALLY did it! You walked us through thoroughly, and holy smokes I DID IT!!! I honestly feel like doing the cabbage patch dance!
