Tamales are definitely a labour of love. I usually make my meat and sauce the day before. I do chicken, beef and pork. The second day I usually make masa and fill then cook well into the night since it's just me.
I made a sauce from a Rick Bayless book and he toasted the chilis in a pan on stovetop, added liquid and removed the skins. It was delicious but very tedious. I’m going to try your take on putting in oven and not removing skins.

Typically smell is a good indicator if something is turning bad. I have frozen banana leaves readily available in my grocery store and fortunately have not had issues with those. 🙂

Can you use this technique with placing the masa with corn husks? Or is it spreading the masa only?
You definitely can use cornhusks, just spread the masa, fill with chicken & sauce, then roll them up. 😊
