This is one of my favorite all time recipes. To modify, I switch out lime zest/juice since the lime leaves are difficult to come by. I also add bell peppers to the stir fry for more texture. Perfect way to treat myself while being healthy too.

this is already something I know many southeast asian people make at home. there's a delicious stew version that i like better. Usually with pork rib cubes. Great work capturing that authentic Thai style taste by the way.

Interesting recipe. Quite hard together a lot of lime leaves in N London - and they are quite expensive. I use a similar but different recipe which uses spring onions and asparagus with similar but not identical sauce ingredients. I will try this version - it looks better TBH (with the possible exception of the aparagus which I think works really well).
If you can’t find lime leaves, try adding the zest of a lime in the main marinade. Works perfectly.
I think u could use that paste on a Thai fried chicken 🍗. Also in a simple curry 🍛 😋.

So I made this but made too much of the stock/sauce and well pretty much everything else so I ended up turning it into a nice curry-type dish as the chicken ended up just floating in the liquid. Made some noodles as well and thought it was delicious!
I guess we call that a happy accident. Good on you for improvising rather than getting flustered and trying to cook off the extra liquid.

Well now I need to try and find fresh lemongrass in December now
Just a heads up that asian grocery stores often have it fresh all year round, and even packs of already-diced lemongrass in thier freezer section.

In Chinese shops, try looking for 'Vegetarian Oyster' Sauce . Lee Kum Kee brand or other brands. Their Vegetarian by Buddhist standards. Main ingredient is actually Mushrooms.

Please please please stop the iterating music - it’s simply not needed, Jeremy is the only sound sauce you need.
Not showing what he is doing with his hands and then cutting to close-ups of another step is just bad camerawork. Give the cooking some space.
no more slo-mo, that's good.. but still prefer the old format tho.. too much close ups, no full view of the action, just half up or half down or zoom in.. feels stuffy and crowded
