    Steam-flaking makes corn more susceptible of fermentation (by bacteria) in the rumen. In cattle, that is. Does that mean that it's also more susceptible to fermentation in the hind gt of horses, instead of enzymatic digestion in the small intestine?
    I think I noticed this in my horse, but they always say that steam-flaked corn is easily digestible, so it doesn't reach the hind gut. Seeing this video I'm starting to think that that is mostly true for cows (or other ruminants), but not so much for horses and other monogastric animals.

    Is this what they call processed food ? Why not just give them corn that is corn just t off the cob ?

      I would call it a from of preservation. Fresh corn off the cob you can only feed for just a few weeks per year. The rest of the year you need to feed corn that is at least dried to preserve it. And dried corn is very hard to digest, so cows barely get anything out of it. If you steam flake corn it is preserved, and it's also better digestible for the cows.
      Another way to do basically do the same thing is feed corn silage. That way the feed is also preserved, and digestible.
      In stock feed you always need to do both, one way or the other, if you want to feed them year round. Even fresh grass needs to be preserved, in the form of hay or silage.
