    At the beginning of the video, Gail gives an ingredient list to help so you can easily make sure you have the necessary ingredients handy. Here is another copy of the Ingredient List.
    INGREDIENT LIST and RECIPE
    2 cups sugar
    1 cup brown sugar, firmly packed
    1 cup light corn syrup
    1 cup evaporated milk
    2 cups (1 pint) heavy whipping cream
    1 cup (2 sticks) butter (must be butter, not margarine)
    1 1/4 teaspoon vanilla extract
    DIRECTIONS
    Prepare the pan in which you will pour the caramels once you are finished cooking them. I use a 9"x13" casserole dish. Very lightly butter a piece of parchment paper and then place this inside the casserole dish. Set aside.
    Use an extra-large pan (like a Dutch Oven) and a silicone high-heat whisk (see the links above). In the pan, add the sugar, brown sugar, corn syrup, milk, cream, and butter. Cook over medium to a little more than medium heat. (This might be at the 5-6 mark. Do not use a higher setting.). Stir constantly until it boils, and then stop stirring. DO NOT STIR AFTER IT BOILS. Let it be! Watch the candy thermometer. When the mixture reaches about 241-245 degrees, take it off the heat and then stir in the vanilla extract using the whisk. Please know your thermometer. I have made these caramels when my thermometer was way too slow, and the caramels overcooked. I have also made these caramels when my brand-new thermometer was too high, and the caramels were not as hard as I wanted them to be. If the caramels are a little too soft, an idea is to cut apple slices and put the caramels on top of the apples. WOW! This is so delicious!!! What you might do to test your thermometer is to clip the thermometer to a pan of water. Turn the heat on and boil the water. When the water boils, your thermometer should read 212 degrees. Adjust your cooking accordingly.
    Immediately pour the mixture onto the parchment paper. (See the video for how Gail does this.). This will be runny at first. It will thicken up after it cools. Let it cool until set, which will be a few hours. I let it cool overnight. After the caramels have cooled, cut them into rectangles to serve. (See video for how Gail does this.) You can use parchment paper or other paper and wrap as gifts.
    NOTE: This will take anywhere from 40 minutes to about an hour to complete.
    The higher the temperature you cook the mixture might result in a harder caramel. If you take it off the heat at a lower temperature, the mixture will be runnier and will be more like a sauce. Gail has another video about caramel sauce that is wonderful for dipping fruits or for a topping for ice cream.
    IDEA:
    Add nuts and place these on the bottom of the parchment paper before the caramels are added. Pour the hot caramel on top of the nuts. Let sit for about 1 minute. Using the parchment paper, "knead" the caramel and nuts together. Roll into small balls and let them cool. Then you can dip them in melted chocolate.
