Does the pro not have porcelain coated grates like the regular?
Just recieved my joe bronco regular not pro, seasoning the smoker right now as im writing this comment hahaha.
But i noticed you used a metal cleaner ( i have the same one for my old grill fyi) and joe says the grates are porcelain coated and they recomend not useing a wore brush to clean

@CookinWidKunchi I was getting at that wire brush you were useing brother. They say it will mess up the porcelain coating. I assume this hasn't been an issue for you?

@billweirdo9657 no issue yet. Wire brushes won't damage it if it is hot. Debris get cleaned off easily when hot. Less friction

@kakusei3672 too much wood isn't a thing brother. That's a myth with people who don't understand how to run a clean fire. "Too much smoke" is typically a result of dirty smoke which most times come from moisture, poor airflow and/or wood that's not ready for cooking.

@@CookinWidKunchi pretty sure you can have too much wood in a drum dude. But I understand what you are saying

@kakusei3672 okay, yes you could technically have too much wood but we should know what too much looks like. This what I have here is not that
