If anyone is getting an error where the picture is filling in more detail than the preview shows. you can fix this by sizing down your photo. This effect works better on canvases that are 7" tall (from my experience).

Every time I change the white to a color, it turns gray.

that means your greyscale is on, you can turn that off by going to Image > Mode > RGB Color

Photoshop is a subscription service now. If you go on adobe's website you can find basic plans starting at about 10 dollars a month

Theres lots of different free editing apps, if they offer similar tools you can get creative and get similar results.
