I usually take off the skin from boiled potatoes when I eat them, but I do eat it sometimes when I make baked sweet potatoes. The skin is edible, so it’s just a matter of personal preference

My sweet potatoes are the size of the palm of my hands. So how long should I leave them boiling for?
Reduce cooking time by 10 minutes and check to see if they are cooked (pierce with a fork and see if soft). If not cooked, just boil some more
