As a mexican let me tell you this looks so good. If you ever visit Mexico, I highly advise you to try this in the north. It’s not usual to visit the northern part of the country, but I’d recommend maybe Monterrey or any city/town in the Coahuila state. Some of the safest places in the north :)

If you want truly good smoked meat, a thermometer or sensor won't tell you that information (of being done). You'd use a pit or just a grill with a fire box, stay up all night while it's smoking. Add wood chips to it, poke it to see how tender it is, maybe flip it or turn it if it's a piece that requires it. You know, how people have been cooking for thousands of years. Real cooking is very labor intensive. I assume you didn't know that smoking has been around since before electricity, sensors, thermometers, grills, etc. Smoking is one of the most prehistoric ways people learned to cook. How do you think they did it? I'll give you instructions on how to make one at home if you're still confused.

It's a texmex thing, basically because we were all broke and sour cream was cheaper than avocados. Made it stretch further.

En el norte de México también usamos esa receta tex-mex. Muchas cosas del tex-mex vienen de Coahuila, Nuevo León y Tamaulipas.

El chicharrón en México se fríe en manteca de cerdo y sabe delicioso.
Nunca lo he probado ahumado, sazonado y frito en aceite, pero se ve muy bueno.
Bueno ese tipo de "chicharrón" no es tradiciónal de hecho tiene poco tiempo de que lo han hecho famosos el verdadero chicharrón tradicional de México es otro esa que frío el del vídeo se llama panceta
