I came across this channel by accident as I work third shift and like to have background noise on. This has been some of the most informative and strangely delicious-looking stuff I've come across in a long time. Your cheerful demeanor makes it all wholesome in such a stranger manner, lmao.
The spines are an adaptation to prevent predation by sharks like the angel shark which hunt by hiding on the sea floor (often hiding under sand) and use a "vacuum" hunting method. The japanese bullhead shark hunt on the sea floor (looking for crustaceans and molluscs to crush with their grinding teeth) and thus would be vulnerable to angel shark attacks. Since other closely related species like the horned shark/ port jackson shark also retain this dorsal spine adaptation it must be a pretty important selective force for these sharks. There are actual videos on youtube of this interaction happening. If you're curious search "angel shark swallows horn shark". Very unique predator prey relationship.
Fascinating how a ton of different fish evolved the same methods, like triggerfish with their spines and even things like spiny lobsters that all have some sort of spine to keep themselves anchored in a hole. Mostly seen on reef fish that hide in crevices, which makes a lot of sense.

You need to roast the sharks head in a wood oven, it has amazing cheek meat. Steam it first and then finish in a hot oven. It must be roasted until the skin is really brown, almost burned but not quite, then it will go sticky and sweet and beautifully smokey. It is wasted if it is boiled as you will not get the special qualities that the hot oven will bring out. Try it! :)

We (had) a huge population of Great Whites here that has recently almost disappeared because of Australian boat catching all the slammer sharks which is their prey because the Aussies like to eat shark as fish and chips. We have many species of smaller shark her but they are drastically over fished. Anyway, I hope you try my method and let me know what you think! Also, experiment with different herbs and/or spices to find what works best for you. Myself, I enjoy sage and/or thyme. Most think it is wrong for fish must I think it works well with the smokiness from the wood oven. But it is open to interpretation. This recipe is good for any large, meaty or oily fish with a big head like Tuna or Marlin or Shark. Let me know what you think and or any improvements you make! :)

I swear this guy catches rare species and just puts them on a plate like it's nothing. This is equivalent to playing one of those video games where you catch and cook whatever weird creature you encounter in the made-up game world. This is so mind-boggling because it's not even a video game, but something that's happening real time.

as far as i remember the spike/barb is for defense mechanism especially when they're still small, i saw it on nat geo wild theres a big fish that try to eat this shark (baby) so the fish is pretty much swallow it whole but then spit it back (cuz the barb). fun fact: this shark hav spiral egg sorry for bad english n feel free to correct me or add more explanations

I don't know what to call those in Japanese or English, but I guess sand sharks. They're usually 2 feet to less than 3 feet long (.6~.9 meters long).

The shark was rougher than most because its scales are bigger. Normally sharks have nearly invisible, almost tooth shaped scales on their skin. But this shark had clearly visible, and more scaley shaped scales. You honestly might have been able to descale it, which is weird for a shark.
For the English subtitles: normally we would say venomous for anything that can sting or bite you and poisonous for things that hurt you when you eat them. Also, instead of robust for things that are not smooth, we would say course or rough.

皮の模様が虎みたいで美しいから、バッグや財布、日本刀の柄の部分に使うとか、なにかに利用できそうですね。
ヒレにあるトゲは外敵、自分よりも大きなサメから身を守る役割を持ってます☺️
毒に関しては一応あり診察・安静にする感じの毒性です。
