I caught a 34" bonnet head last week on a Saturday morning, put it in my ice chest, covered it with ice and brought it home. Filleted it Sunday afternoon. Before cleaning, I read all this same stuff on line about bleeding it, cleaning it immediately, and a bad smell from urine in the skin. The same things I'm reading here. I experienced little to none of that. I did not bleed it, there was little oder, not anything more than any other fish. It filleted easily. No bones, just a backbone. Nice white flesh. I soaked it in milk, coated it with cajun frying seasoning, fried it and it came out perfectly light, flaky, white fish-like texture. Ate it with some bread, cocktail sauce and fries. It was great! I caught it wading 100' out in the surf at fish pass jetty by Mustang Island State Park. Walked it into the beach before I landed it. Didn't know what I had, and was glad I did. So that's my experience, not what I read or heard someone else say they heard.
I caught two a 16incher and a 19incher on live prawn the other day. They are way more of a fight than i was expecting for the size I brought up.😂 can't wait to taste them. They apparently love structures near the bank line because we pulled three and one jumped out of the boat. They all were caught from a concrete structure up against a wall like that about 16-25ft deep. Curious as to how big they get. We got an octopus in a can that wouldnt drop the prawn too.
Had this for lunch today and I can confirm if you immediately kill it and gut it then soak it in milk. The ammonia smell is gone and you will have a good tasting fish.
Bleed it and take out guts immediately after catching it. Then put on ice. After filleting, put fillets in milk for about an hour in refrigerator. Afterwards, pat fillets dry with paper towels and then season. It tastes REALLY AWESOME.

@@XtremeH18 yeah what you need to do is gut it and cut the tail head and fins and put it in ice water or salt water so it drains. Then you will have a steaky delicious meat.
Nice catch and cook!! I have heard that sharks urinate themselves so after catching them you need to ensure that you either bleed them or keep them in the water while bleeding them ? Good catch
I’ve found that with sharks you have to submerge the meat in a mixture of milk and garlic to take away the wierd smell and taste . Great video I always go to bill bags park but to the beach side never given fishing a shit there but it looks great 👍🏽

I love these outdoors type videos, so I’m not trying to be critical or anything in fact I enjoy watching these catch clean cook. However it’s important to say that bonnethead sharks are endangered so it’s best to avoid consuming them

Buenos dias tienen buena masa deliciosa lo unico que tiene el tiburon es el olor a orina eso lo tienen en la sangre lo que yo ago es cuando ya termino de pescar hay mismo le saco el filete y lo pongo en la cubeta con agua salada por unos 20 minutos eso es para que termine de soltar la sangre de la masa y te le quita ese olor y si estas en casa con agua de la llave lo aprendi con pescadores viejos de cuba
I’ve always been told to filet or cut out blackstrap immediately upon catching if you plan to eat because of what they secrete… I was waiting on you to puke lol

I gutted out immediately but freezed it, can i do something to the meat once unfrozen?
Put in milk , gets the ammonia fishiness out.
I got one 43” 4 days ago, bled out right the way, no smell at all.
