    I have been making a gallon a day for 49 years now in Hawaii from frsh coconuts here. I blend the medium aged coconut with water and probiotics adn pur into quart jars and let sit for a day in room temp and then put in friege it lasts for months if need be (skim off the top). You cannot mess this one up it is too easy.

      any tips on what probiotic to use? ive got yogurt starter with 10 different bacteria but i don't know what works better with coconut vs. milk as far as probiotics.. i also have a yogurt maker that heats it a little, not sure if its too hot for this or fine to do just like milk yogurt. thanks 😊

    Thank you. That was great. I love coconut. We have a lot of coconut in our country. We usually use it for drinks, lotion, cooking if I will. Now I can make yogurt. learn it from you.

    Great.. A couple of thoughts.. If you pierced the lid would that not help the probiotics metabolise and also stop the spillage.. or just put it on loosely..
    Also if you are making this on a regular basis it should be possible to use your yoghurt as a culture instead of fresh probiotic powder each time which is very expensive..
    I've not tried yet but will have a go.. thanks for the vid.. ;9)

    You can use the same culture over adn over from the batch before.. (one teaspoon of older yogurt in new batch) use it for sauces and dressings and smoothies and sour cream recipes I ahve been 100% raw foodist vegan for 50 years now.

    WOW! Thank you very much Alison for sharing this COOL recipe for making Raw Coconut Yogurt with real natural coconut, saw 2 other videos but they recommend using canned coconut milk, preferably from a Thai brand, as for the temp, this other pretty chick, Dana, recommends we have the yogurt at a room temp of 75°F and higher, but she didn't specify how high and with what you tell us here, a great room temp is 90°F, depending on how hot it is right now the temp varies betwee 88 and 90°F, once the rainy season starts in June, it will cool down a bit, probably going down to 75° and 82°F, so either way I can now make my own homemade Raw Coconut Yogurt, thanks to you! Uprated and sending ya greetings from Mexico. :) Oops, forgot to thank ya for the link to buy probiotic powder at Amazon, will be using that soon. :D

    Thank you for this recipe. I’m gonna have to try making it with younger coconut. I attempted to make it with water instead of coconut water and i noticed the yogurt was started developing but there was major water separation and it doesn’t smell so good :(
    I am determined to try again.

  • @healthnutnation

    Becka- I'm wondering if the frozen shredded coconut you used was maybe from a mature coconut instead of a young/green coconut? Otherwise it should have gotten smooth. My only other thought is that some people have complained that Blendtec's don't make smooth nut butters, so maybe that was the issue. I'm sorry it didn't get smooth for you.

    YES definitely dont use much though or your jar will explode with groth literally.
    it is goo to set your jars in tupperware or otehr containers till it finshes expanding otherwise you might wake up to cocnut yogurt all over your counter rising out of the jar as it grows and expands

    Do not use Melissa's brand coconut. They are molded more often than not. When you crack it open, if the meat has a thin layer on top of the coconut that is either a blackish color or a pinkish color it is already starting the process of molding. You will have to take it back to the store and exchange or get money back. The young coconut MUST be just white, no tinge of slight pink nor black. Pure white only. The liquid should be almost clear. If the juice is the color of gingerale, do not drink and do not use coconut. How can you tell BEFORE you buy it....turn the young coconut upside down and taking both thumbs, try to push in. If the bottom moves inward even just barely, do not buy. If it does not budge at all, it is still good. Use it as soon as you can. Do not let sit in fridge for too long. And the plastic that is over it really does not protect it. It is used to help keep the fungicide on it that the company sprayed it with which by the way does nothing. Spraying the outside does NOTHING for what is going on in the inside. Mature coconuts do not mature in the store nor at your home. They are matured on the tree then picked or shaken to get down. Young coconuts have to be cut or pulled because they just don't fall on their own, they are not ready. The good thing about young coconuts is that they have way more water and more electrolytes than mature coconuts. The bad news is that there is no such thing as ripening OFF the tree. Bananas ripen off the tree and tomatoes ripen off the vine (if not picked too early) but young coconuts do not. Once a young coconut leaves before its time it starts dying (rotting) immediately. That's why you must use it as soon as you buy it. It comes from Thailand then goes through processing (sprayed and packaged) then to a warehouse that's not cold then to the stores and they don't all go to the same warehouse. There are some coconut platations in Florida that ship the day or next day you order and they are cheaper than the store but ends up being more expensive because of shipping and handling. But they won't be sprayed with fungicide and sitting in a warehouse for who knows how long.

    I love your video & I tried making this for the first time last night, but unfortunately it was pretty much a fail. I killed the probiotic by accidentally over blending the frozen shredded coconut in my Blendtec, which brings me to my question. How do you keep the yogurt from coming out so grainy? I blended it for 3 or 4 rounds trying to make it smooth. Any suggestions? Or does it never get completely smooth?

  • @healthnutnation
    @healthnutnation  11 ปีที่แล้ว

    No, it doesn't spoil. The probiotics will not cultivate if you put it directly in the fridge. They need to warm up to activate and proliferate. Remember coconuts thrive in extremely warm/hot climates. They don't spoil easily.

    I've got to say that it's thick like Greek Yogurt but has a very different flavor. Try adding a few drops of liquid stevia and see how you like it. Also, Greek Yogurt is only sour if it's low in fat. Try buying the full fat versions (Trader Joe's sells a full fat Greek Yogurt that my super picky husband LOVES) and see how you like it (and don't be afraid of the fat, it will help you to stay fuller longer, and helps you to properly digest the lactose and protein in the yogurt).

    how about put the contents of a young coconut(meat+water) in blender, blend it then strain it(to retain fiber), you got coconut milk. Then put milk kefir grains into the coconut milk(1 tblsp. milk kefir grains per 1 cup of coconut milk)next day you have coconut kefir .

    • @healthnutnation
      @healthnutnation  10 ปีที่แล้ว

      I've actually tried this and ended up having all of the coconut oil end up in the nut bag/strainer, which clogged up the straining process and lost all of the oil. Plus, it was attached to the fiber, so I couldn't use the fiber for coconut flour. The best method I've heard of is using a juicer....

      I make dairy yogurt as well which essentially uses the same active cultures. The bacteria proliferate (grow) between 90-112 degrees F. If the liquid is too cold, the bacteria go dormant and will not proliferate. Temperatures above 115 degrees will kill the cultures.

    Unless I'm missing something, this appears to me to be a very expensive way to make coconut yogurt. One of my reasons for making coconut yogurt is to reduce the cost from store-bought coconut yogurt. I think I will stick to cheap and easy, using a starter from a jar of coconut yogurt, added to a can of Thai coconut milk or cream. We do what we have to do.

    Hello, mine never thickened up. I knew it looked much more watery than yours when I blended it. I used the frozen young coconut and one bag equalled 2 cups. I put a little bit more water in it ( I guess I shouldn't have). It stayed in the oven with the light for 20 hours and it did not thicken at all. Now I have it in the fridge. Is there anything I can do with this? Add more coconut and try again, or do I need to throw this out now? Thanks for the help!

      Tammy Richards Don't be sorry. Any probiotic will work. Just get one that isn't too expensive, doesn't contain dairy or gluten, and that you think you'd take as a supplement (so you can finish up the bottle and it won't go to waste). You need at least 30 billion CFU's, so that may be one pill or more (just look at the bottle). I recommend and link to the brand I use in the video here: www.healthnutnation.com/2013/04/02/how-to-make-raw-coconut-yogurt/

    Where do you purchase the young coconut meat? I can not find it any where?

    • @healthnutnation
      @healthnutnation  8 ปีที่แล้ว +1

      I generally find it at specialty food stores, Asian markets, and Indian markets. Sometimes you'll find young coconut at a regular grocery store in the organic section.

    Can anyone please tell me how to make just PLAIN hemp seed yogurt with coconut or anything else? I have the hemp seeds and the Liyfbiotics ready to go but I can't seem to find just a plain hemp seed yogurt recipe anywhere and can't afford to waste. I appreciate any help or recipes

      Grind your hulled hemp and add probiotics. I got a yogurt maker ...it speeds up the process.

    And could you make this using coconut milk? I'm not sure I can get the frozen coconut and I've never seen the young coconuts over here in he UK

      @healthnutnation  10 ปีที่แล้ว

      coral laroc I've never tried it with coconut milk, but I don't think it would work. It's very different in texture than the young coconut that has been blended. Maybe look for a "green" coconut there? They may not take off the outer husk...

      Hi. I've just found another video where the person used coconut milk. Apparently it works! :-). As far as I know, we only get the small brown hairy coconuts here

    The coconut yogurt if I make it in the morning. How long do you keep it in the oven. How many hours. Also do you have to use mason jars with plastic covers? I only have ones with the metal tops? Thanks You said, you have a book where can it be purchased?

    • @healthnutnation
      @healthnutnation  9 ปีที่แล้ว +1

      Tammy Richards I usually keep it in the oven for about 4-5 hours, but it really depends on the potency of the probiotics you are using, as well as the temperature in your oven and house. When it starts to have a lot of air bubbles, taste it, and see if it's got a yogurt taste. Sometimes it won't taste good until you refrigerate it, but you can tell if it's kind of cultured tasting when it's warm. You can get my ebook here: www.healthnutnation.com/paleo-sweet-tooth-ebook/

    Have you heard anything about coconuts having antibiotic properties that kills the probiotic grains and finished kefir or yogurt? Also are you using milk grains or water grains. Thanks

    • @healthnutnation
      @healthnutnation  8 ปีที่แล้ว

      +Mike Breler I have not heard that. I know that coconut water is often used to make a specialized probiotic drink, so I don't think that is an issue. I use water grains to make probiotic rich water kefir drink using coconut water (usually from the young coconut). I use milk grains to make the yogurt.

  • @Mandyblue1984

    Wow you have some great recipes! Thanks so much for sharing. I don't have my kefir anymore I had the water kind and the milk kind, it was to much work and I also have a Kombucha which I still have that. So dealing with all that was to much. But you said I can just use the coconut water. Also I think kefir makes your stomach fat or bloat or something, it did mine and it happened to my two sister to. so I stopped drinking and eating that and it took a long time for my stomach to go back down, months! And the same thing with my sister I think it took them a lot long for theirs to go down. Dose kefir do that to you? Thanks again

    • @healthnutnation
      @healthnutnation  10 ปีที่แล้ว +1

      Hi Amanda- Anything to do with dairy makes my stomach bloat (kefir included). The water and coconut water kefir I make doesn't. If it does for you then you might check out a low FODMAP diet. It's unusual to have probiotics make a person bloat, and when it does it usually indicates a small intestinal bacterial overgrowth (SIBO) or some sort of intestinal infection. Especially if it takes months for the effects to wear off. Search both and see if you have any of the other symptoms associated with either SIBO or intolerance to FODMAP's.

    Thanks for the response & the tips. I wasn't even considering that my frozen shredded coconut wasn't of the young variety. The only thing I could find locally was sweetened frozen shredded from Walmart, made by Birdseye. That would definitely make sense as to why it would never be smooth, being from a mature, firm coconut. I guess I should try to look harder for an Asian market. ;) I hope to try again.

      Becka- Well at least you can make your own coconut milk with the frozen shredded (mature) meat from Walmart! I'm sorry the yogurt didn't work for you though.

    Hi Allison, can you use dry coconut? If so how much? I am having a hard time finding fresh coconut in the freezer at our stores. Also can you use canned coconut milk? Thanks Tamara

    • @healthnutnation
      @healthnutnation  9 ปีที่แล้ว

      +Tammy Richards You might be able to soak dried coconut overnight in water, coconut water, or canned coconut milk. Then blend it until it's smooth and see if it works. Please let me know if you try it!

    so you can sit it out on the counter overnight if it's warm out? what temp range is acceptable? can you use coconut butter and or canned coconut milk?

    • @healthnutnation
      @healthnutnation  8 ปีที่แล้ว

      +Kyle A It should be around the 90 degree F mark. Coconut butter is simply the oil of the coconut meat and won't work. Canned coconut meat should work, but I haven't tried it yet.

    I made this 2 days back and teksture is creamy but also slippery. Is it supposed to be like that?

    • @healthnutnation
      @healthnutnation  8 ปีที่แล้ว

      +Everyday Mom - It can be depending on the young coconut. Sometimes it's creamy and sometimes kind of glossy. I think it depends on how mature the young coconut is, as the flesh is either thin and translucent or thick and meaty.
