Great work! As a Haitian, I am thankful for shining the light in Les Les Cayes, Haiti. This is just one town in the South of Haiti but there are others. The Western media want the world to believe the gangs have taken over Haiti so that they can come and still the many natural unexplored riches under the soil. Haitians use a lot of spices in cooking meat and fish. Sometimes they used the spices overnight and cook the fish next day so that the spices can sip into the meat.
Haïti 🇭🇹 will flourish again, no matter what they do to denigrate her.

That's how we Jamaicans fried green plantains. We half fry them,take them bake out the pot then crush it and put it back in the frying pot to finish fry

Only the green plantain gets cooked in this way, by first frying then pressing flat and refrying. As it has a savoury taste. They also cook green plantain like this in Colombia, Cuba, Puerto Rico, Dominica republic, Costa Rica and Honduras. The yellow plantain (fully ripe plantain) is sweet and sliced in the way you were suggesting along with many other ways of slicing and eaten in every Caribbean island and some African countries. You can press the yellow plantain but not when it is fully ripe besides it doesn’t give the same taste as it is too sweet. Everything looked tasty 😊❤ Hats off to the chef 👩🏽🍳🔥
Let the plantain get very ripe so when you fry it it caramelizes in the hot oil. Very savory eaten alone or with bread.

We also cook our plantains just like this too in Colombia 🇨🇴 . Over here it’s called “patacón”. And it’s also very common in most Latin countries, some call it “tostones”.

AT FYI!!. About The Plaintain recipe!! you said you haven't see this in other Caribbean place that you visited so I'll tell you this. That way of cooking Plaintain is done all over the Caribbean. Central and South America!. From Cuba, The Dominican Republic, Puerto Rico, U.S. Virgin Islands, Columbia, and so many more; even in Parts of JAMAICA they fry the Plaintain then flaten it in a paper bag then refry it again add seasoning. You still have not experienced the whole Plaintain thing just keep traveling. You will soon know how the thing go.😅😅😂😂❤

African Tigress, Please note that the plantains are not only done that way in Haiti. If the plantain is very green, they come out like chips. It is also called tostones in Puerto Rico. Some of the other Caribbean islands and Latin American countries prepare them that way too. I live in Toronto and I make fried green plantains sometimes. Of course, we boil the ripe plantains and fry them when they are very ripe.
That's a vibe out there in the wilderness by the river cooking meat and plantains, that's a true island experience, I would love that.

In Guyana we do it the way African Tigress did it. Also, instead of cutting the plantain so thick, we slice it very, very thin and fry. Then dust it with salt and it is called plantain chips, like breadfruit chips. It is sold in small plastic bags as street food. I'll try it Haitian way some day..

Wait for the plantain to ripen. Peel, slice and fry. Ripe plantain (when skin is near blackened) caramelizes nicely in the hot oil. Very sweet and savory eaten with bread or on its own. Green fig is different. Boil, mash and season the green fig. Or boil it whole in a well seasoned beef or fish soup. Real nice AT and friend.
In the Caribbean we eat it both ways. Green or ripe. Depending on the taste you're going for.

Tbh it's still the most beautiful part of haiti. The houses, the restaurants and the Mountains ugh beautiful.
