Just FYI not all ube is deep purple there are even ones that are super pale purple they look almost white. Like potatoes there are different varieties of it. This deep purple one I think might be the Padihot variety. You'll know it's not sweet potato from the skin of it. Ube's skin have lots of calluses and hair-like things (tiny roots) sprouting out from it and feels like a tree bark.

Ube has 500+ of different kinds here in the Philippines. In my home town in Zamboanga Sibugay, we have ube that were similar to sweet potato on our field. They grow like vines. We also have this one in the video and the most common one and is best for making jam.

Yes! "Real ube" is what Filipinos call it when it is deep violet in color. Yes, it is still ube when it is white inside but Filipinos prefer to purple over white since ube is mostly used to make ube halaya in the Philippines. I was also confused before since my mother often tells me she can't find "real ube" in the wet markets but it's just that she can't find one with deep purple in color. Filipinos like it deep purple in color so that they don't have to put purple food coloring.

We have a smaller version of this in India called ratalu. Same stuff but tad smaller. We cut and deep fry it, sprinkle some salt. Tastes delicious. Also make curry out of it.

Unbelievably, what's even more embarrassing is that I was actively a chef for 26+ years, and I should have done educational videos like this, I mean if anything just at the very least, made ones specifically for my friends and fam at least. The way my mother would so it, is to boil the whole ube without peeling, like a potato. Then after cooking you can peel off the skin easily
I'm from India and in our country this is called "gadadu" you should put vegetable oil on your hands before cutting it and after cutting it just deep fry it until it's golden brown and then sprinkle some salt and red chilli powder it will taste so good I swear

I miss this. We have alot of this in thr Philippines 🇵🇭 we will plant it next to moringa or soursoup plant because they grew vine and big. It depends where we plant, the color will be deeper purple. We will boil it and dip with sugar or add it on binignit (coconut milk with banana, sweet potatoes, boba and sugar).

It's called "taro" in Indonesia, and we used word "ubi" for sweet potato. Our taro mostly white with a lot of tiny lilac to purple spots. I had one in my backyard and my family left it for almost I think 4 or 5 years, when we harvest it, we got more than 50kg with the biggest root is around 7kg.
Here in southeast Brazil, we call inhame, but the “correct” name is also taro.

IDK why, every tribes has their own varieties, like some taro only can grow in specific area. And the one that looks like in the video, only grow in west Java..
We also have Taro here in the Philippines but I think the one y'all talking is not the ube in this video. Taro and Ube are completely different..
@Hikun yah.. sometimes it's misleading, so I like the local name more.. so I'll give you their species name, "uwi" is Dioscorea alata.; there's another too, this is the one globally recognize as taro, Colocasia esculanta.; and "ubi" is Ipomoea batatas.
Taro and Ube are two different things though. Both are root vegetables, but not the same type. Ube is a purple yam - a "tuber" vegetable like potatoes. Taro isn't a yam or any kind of tuber. What she has in this video is ube

Here in the Philippines you just can cook it in hot water (Boil) no need to peel the skin... it is easier to peel the skin when cooked.

We call it water yam or isu ewura (in Yoruba) in Nigeria. The pure white variety is much more common there and is only used for savoury dishes, never sweet. Some dishes include Ikokore and Ekpang Nkukwo. I have used the purple one to cook these dishes too... not much difference except colour. Just as slimy

My mom said that ube is best harvested during the dry season when plant leaves are small because it indicates that this root is growing large underground (because it's a root, it stores a lot of water during dry season).
I remember making ube iced candy out of this when I was a kid. To lessen all the work and the tendency to get all purple, we boil it like we boil potatoes and sweet potatoes -- skin and mash it only after it's cooked.

The best way to peel ube is to boil in hot water first. U can cook into big portion too. Trust me it will be more easier and no sticky part on ur hands.

We used to hunt ube (real purple yam) in the forest. Different shapes and shades were also available. They are mostly at greater size when the vines wither, and when they start to sprout and grow lush with thick vegetation, the roots in the ground are used up for energy. Then the cycle goes back, when the roots grows back with greater sizes.
Ube in my language, Ibo, from the South Eastern part of Nigeria, is pear . It is small and purple inside. It is cooked by boiling or roasting and eaten with corn or coconut.

Here we use them to eat corn or bread, they kinda sever the same purpose
I remember my grandma would boil these and pound them on the rice pounder and we'd gradually add some condensed milk and keep pounding it until it's thick all mixed together.🤤 After that she takes it out and shapes/molds it into a circle and would put it in the fridge to chill. When it's all ready we would slice it like a cake and eat it while we drink hot coffee/chocolate or milk. OMG it's a must try! Simple yet so fckn good. I recommend it to all! You can add whatever else u want to it too, make it your own.
That sounds like what native hawaiians do with taro! it's so good! I worked in a school on Oahu for a while and got to go on a field trip to a farm and see them in the water. So cool. Root vegetables are the best 💜

I love boiling it and eat it, use to eat it at my grandma's when we were young.
In Nigeria our yams look like this on the outside but are white on the inside.
New yams have more moisture and can be slightly bitter or bland. Old yams on the other hand are drier, like the ube in this video and have a sweet taste. The top and bottom of the yam(head and tail) are usually bitter however and turn yellow when left out after cutting.
My family Nigerian and this is true but our yams turn white and dry after cutting
@@elmariajin1285 Usually it's the bitter parts that react this way if you don't soak them in water after cutting. They turn darker, similar to how an apple would after being cut. Although some apples react faster than others

I got 3 types of root vegetables from my mom from Puerto Rico called malanga, yautía blanca, and yautía lila. One of the things I’m making is that I mixed it with ice cream and bought some cans of Asian jellies and I’m gonna make something kind of like halo halo basically but with what I got instead of it being exactly it. The only thing I really don’t have made right now is the custard part. It’s kind of not funny that if I look up halo halo on my phone map there’s at least 30 spots across the border in Toronto Ontario area that have it and not a single Filipino restaurant on this side of the border.
It's a bit like that over here in Derbyshire, England: there's no Pilippino stores or cafe's I can find anywhere around, the nearest is a Jollibee's in Nottingham (the next county), about 25 miles away, but if I go down to London, there are loads of them (but thats 120 miles away :-( .
OG ube, a lot of this can be found at the foot of Mayon Volcano (Albay Philippines) before, but because it wasnt a high yielding crop, most of it disappeared.

I think I had ube mochi once I tend to get it confused with taro so not 100% sure but it is such a unique flavor and really grew on me, it’s so good.
Taro is not purple like Ube. Taro is Yautia is heartier, earthier and can be eaten mashed, and fried, and grilled! Ube is mostly used for sweets.

@BigPurp Yes we call the plain white ones just yam. I was a bit thrown off by the name ube. It's a common food here for us never knew that you could prepare it the way she did. We boil it and eat it with meat or fish with vegetables.
