Carolyn...I have PTSD also from childhood trauma. A mentally ill mother and an alcoholic father. I also feel safe when I am alone and its all okay! This is how we learned as children to cope with it all, so we enjoy our solitude as adults. It is still our main coping skill and I still say......its all okay for us to do so! If some feel rejected because of it then that's okay too. For once we are committed as adults to taking care of ourselves now, and we make it a priority because no one did it when we were children or at least when I was a child. I can only speak for myself really and that's also okay! I've learned to look out for myself and it feels good!! Life is simple now.

I have severe PTSD myself. Also from a traumatic experience. I did the opposite. I kept falling in love and marrying the person that supposedly would protect me. After my last 20 year marriage, I have decided to think about myself now. I have learned that I molded myself to always please the other person. I never really learned how to mold myself for me. That is what I am hoping to learn from my solo camping.

I love to take sweet potatoes, cut them in half lengthwise, and roast them just like that face down in a little olive oil until the cut side gets all caramelized and crispy and the potato is nice and soft. Then I turn them over like little boats, fluff up the cooked potato, and add whatever veggies and protein I have on hand. Sauteed chickpeas are great, with some greens or red cabbage. Drizzle with a little tahini sauce or tzatziki or thinned out hummus, and it's amazing!

But that's ok, I own my little country acre in Oklahoma I have my little dogs, all elderly,y chickens, and my daughters four dogs one little three big, one elderly. And three cats, one was newborn about 2 days old in the middle of an intersection in town on a 110° degree day last Oct he's now about 8 months old I'm terrible with math. Love watching your videos. You asked how to get peanut butter out of bottom. Spray your blender and spoon fork anything that u will get peanut butter on with cooking spray or olive oil. After I use blender I add hot soapy water and turn on and let it run a few minutes.
As for what I like On sweet potatoes I like to microwave or in airfryer I love lots of butter and brown sugar and cinnamon maybe nutmeg. But definitely brown sugar.

Put all of this back in microwave for additional 40 seconds. And enjoy!! Also, sometimes I run several lines of bold mustard down each side & mix in slightly. 😋

I use a Bucket and a Toilet Plunger to wash my clothes when I have access to at least 10 gallons of water. I tried this method just to see how it worked and do it every time I can now. It’s a Slow process but it’s a way for me to occupy my time. Wash with 2 rinses is enough. I have to hang the clothes on a line for 2 days when I hang them up soaking wet. I haven’t had a chance to wash them this way during the summer, they should dry faster then. It beats going to town just to wash clothes.

I so enjoyed this vlog. Cashew cheese…I need that. Going low cholesterol these days and never had this option…I found the park in Texas so soothing. Your RV has a great vibe. Been watching you on and off for a few years now.
Today I had a salad at a casual restaurant that had arugula, roasted Brussel sprouts, pecans, dried cranberries, beets, and cubed butternut squash with champagne vinaigrette! It was surprisingly delicious. We were at a chain place called The Silver Diner. It was simple and delicious as well as heart healthy. I am planning on making this at home myself very soon! Bet you could do something similar and it would be tasty. 😊

Man Carolyn, I wouldn't have put soap in that wonderful left over peanut butter. I would have added some honey, maybe organic coconut milk cream in can, a few of your roasted sweet potatoes for thickener, sprinkle of salt and nutmeg if you like and ginger, whipped it up for a hot organic,
extended Christmas eggnog (in fact you could add a raw egg for extra protein and smoothness)
yum...think I'm going to go get those ingredients and make one myself. Hope that helps.
Enjoy your attitude/ survival techniques and cheerful flexible attitude. that's why you don't get "bent out of shape. keep up the good work. you're fun to watch. I'll be back.

In the olden days, we used to get retread tires. the tread would come loose from the tire from time to time, and make a huge bang. sometimes the tire didn't go down, and if you didn't look on the inside under the auto, you didn't know what happened. I think they stopped letting people retread them. That would have been around 50 yrs ago. OMG I'm OLD 😎

I really enjoyed this video! I've lived in Northeast Texas almost my entire 61 years. I have never been to Padre Island, but I might have to go just to check out that cool store! 😎 😅

We have a peanut and sweet potato curry quite often - with spinach.

PB CLEANUP - make a sauce in that blender that can dissolve the excess pb. Maybe a soy/peanut sauce. Or - hot broth to dissolve pb scraps to be added to a soup. I'm a pb fan too, now you've got me dreaming of a soup with pb in it!

I make peanut butter soup in my crockpot. Add chicken, season to taste I use Goya and fresh onion and garlic or powder add water to cover the chicken and 12 ounces of peanut butter, or less. When chicken is done you will have a creamy peanut butter sauce to eat alone or over rice

I just boil my tempeh in veggie broth for ten minutes and then drain. I put bbq sauce on it and then fry it. Yum!

They do make an Under the blade spatula for Vitamix......just Google it...looks like a T upside down. Also, I marinate my Tempeh in a bit of soy sauce or Bragg's, a little apple cider vinegar and a tad of maple syrup.....then cut into strips and bake it. Delicious.

Vitamix: after you scrape out the PB, make a smoothie that has a bit of PB in it. It will scour out your container. I got the Bluetti 200 (not sure if it is AC or L) but it said that I needed to get a little piece of some sort of wire before using it-- haven't done it yet, as I have not been camping since I got it.

Maybe make a peanut butter smoothie after you scoop it out and then you end up with a yummy drink too? Might work? Looks like a cool spot to camp! Thx for sharing!
