    Some suggestions...
When formatting in Word, I always recommend clicking the ¶ button to toggle ON the view of non-printing characters. This will give you cues about formatting that are otherwise easy to overlook: for example, is a paragraph indented by a paragraph indent value in the Format Paragraph dialog or just by the user pressing the Tab key? You will see the tab symbol if is the latter, but not for the former. Moreover, if you choose to show all formatting marks (Options > Display > Show all formatting marks), the ¶ toggle will include a small black square in the margin for any paragraphs that have invisible paragraph attributes like “Keep With Next”. Even better, if you double-click on such a mark, the applicable tab in the dialog box will be displayed.
For this video, if you had pressed Shift-F1, the “Reveal Formatting” pane would have been presented to show exactly what formatting was in effect for any given selection.
At ~2:45, you seem puzzled by the apparent switched inside & outside margins, but you are overlooking the fact that the two page view you selected is not intended to display spreads. A first page in a duplex book will always be the recto (right) face; even pages are verso (left); odd are recto. To show this more effectively, you could have chosen to display 3 pages with the Zoom dialog: that would show the 1st page as shown in your video, but the 2nd and 3rd pages would then show as facing spreads - and the gutter would be more obvious because it would be on the inside of the facing pages.
Finally, if I am going to format a whole book, I always start by rationalizing the styles in the underlying template. In your video, the TOC styles changed when you altered the attributes of the title because they were probably “based on” that style. If you take the time up front to set up the styles to have the formatting you want *and* behave together in a consistent manner, you can get to a finished consistent look much more efficiently. Just my 2¢ worth...

Derek, great videos. I formatted my Chapter Body text and all looks well, however, in two or three cases, the last page of a chapter is not aligned at the top. It starts halfway down the page. Not sure what to adjust to get this to look like a normal last page of a chapter. Thanks so much for your excellent vids!!!

This was super confusing. It's meant to be a tutorial, but you start to show something then go, "Nah" and stop, and then make changes in some places, but don't show how to apply them to everything. In other words, I learned nothing and just got very confused.

Always have problem with getting the bottom of pages to line up. So I go layout-page setup and choose "justified"; that then causes the last page of a chapter to justify and spread down whole page. Clicking "top" then gets you back to original problem ...

Why is my space on the right side the same as on the left side when looking at the pages? Isn't one side suppose to be bigger than the other side since the gutter is in the center? What am I doing wrong?

7 minutes in and you looked stumped as to why it was indented, but when you opened the paragraph spacing window, it was set to (none). Then around the 7:15 mark, a space was added to the paragraph when you changed it to .3 indent. But if you went to the paragraph window, there is an option that you check off that says, " Don't add space between paragraphs of the same style." If you clicked that box and checked it off, it would have resolved the problem; at least for the part you highlighted.
You know what you are doing apparently, but you seemed to be scattered. There wasn't a methodology. You just seemed to look for problem places and start dealing with them, only to run into other problems. I think if you did this again and made a crisper video, knowing exactly what you are going to do before recording, you may get a ton more likes.
And if you know how to do setting up of Word for publication, a video on that would be cool too.
