- Rice Pappad recipe in traditional style | ಹಳೇ ತಂತ್ರದಲ್ಲಿ ಮಾಡಿದ ಅಕ್ಕಿ ಹಪ್ಪಳ | Perfect rice Pappad recipe
Usually we press papads with a thick dough. But here we follow a different method to prepare rice papads. We grind the batter just like a dosa batter and spread them over some banana leaves, steam cook with a special method shown in the video and finally sundry them. The steam cook method shown here is, a steamer is prepared with an earthen pot with some water in it and a cloth tied over it as shown in the video. This is a must step in this method of papad making. If this step is skipped, papads may broken after sun-dried. We can add jeera seeds or chillies for spiciness to enhance it's taste. If chillies are skipped, these act as a tea time snack, but with a spiciness, these served with the meal.
Ingredients- raw rice/dosa rice- 3 cups, urad days 5 tsp., banana leaves to spread the batter, jeera/ cumin. Chillies (optional), oil for frying.

This takes me back to my childhood. Everytime we visited Mangalore, my native place, my mum would bring this pappad, besides others, back to Chennai where i grew up.
This one my mother used make during summer vacation and we the children were putting on the mat for drying 👍

My mom used to do this. She used to directly cook on the cloth without using the banana leaves. She used to make small dosa on the cloth which is tied to the pot. Remove it after 20 seconds and put it to dry on the ulta side so it would not stick to the mat. After some time we used to turn it around. Also we used to grind only rice and do it immediately without keeping for fermentation

And after pouring on a thatte idli plates,we can steam it for a second and voila it's done

In Mysore we do 'Akki happala' in different way.. We don't add urad dal.. Grind rice into smooth paste and let it to ferment for least 3 days for proper sour taste, after 3 days we'll add some water to fermented batter for proper watery consistency, add salt and jeera to the batter let it set for 30 mins, mean while we'll boil water in broad mouth utensil, after 30 mins we'll apply batter on plates into papad circle shape and place that plate upon the utensil where papad facing the boiling water. After 10 to 15 seconds we'll take off the plate and remove the papad from plates and place the second plate in the same process. This process continues untill the batter is finished.
After removing the papad from plates, we'll spread some dry grass upon a mat and we'll spread the papads to dry in sunlight, after 5-6 hours the papad is ready to fry and enjoy it.

Yes, we get a stand, where about 7 appalams can be stacked and ready for drying in half a minute. Your method is so beautiful , the green Banana leaves, the mat, all look so nice.
