    It looks fantastic as the others have commented. The chef explained everything so well, I liked his tip with the knife to test that the fish was cooked.

    Thanks for another cracking (2-part) Catch & Cook. JD's been one of my favourite fish ever since I was a young marine biology student and was given one to 'dissect and describe' in a practical exam. Bit of a gift really cos they're so well adapted to their ambush-predator lifestyle. Never caught one myself, though I've cooked and eaten plenty, especially in Brittany, where they often appear on the market stalls. Very versatile fish that works for most cooking techniques but I like it best barbecued over a beach bonfire, with plenty of dried fennel stalks underneath to add a hint of aniseed.

    Great video and lovely cooking! BTW! The story of St Peters Fish is actually the story of Peter not being able to pay his temple taxes. Jesus told him to go fish in the sea of Galilee and catch a fish, he did and hey, it had a sheckel coin in its mouth and he was able to pay his taxes, but left a thumb print on the fish.
    That fish was probably the same indigenous tilapia that fed the 5000 in a different gospel story.
    I lived and worked in Israel back in the day and had a job fish farming carp, St Peters Fish tilapia with the spot were a common bi catch and tasted better. They have been virtually fished out now, other species of tilapia have been put in the Galilee that dont seem to have that spot! I am sure there are other fish given the same St Peters name along with John Dory.

    last year I had a pan fried Dory in a restaurant in Pembrokeshire on holiday ... what a fish !!!It was absolutely beautiful I would have it again!

      @@TheFishLocker I love the coastal forage and cook-up videos and watch them with the kids at tea time (dinner if you're from the south). I don't normally watch your sea fishing videos as it's so specialised and seems very unrelatable to me but... I watched you proudly catch your first, second and third John Dory and felt happy. Seeing them being cooked made my day mate, honest.

    Finally got a chance to sit and watch this video. Beautiful prep! The meat was so white. Reminds me of Trigger fish, my favorite fish. Not yet caught a John Dory, but.... Spargo's Kitchen did a superb job again!

    What do I find amazing about your channel ?.... the dedication to produce regular content is amazing, the variety is truly amazing, the benefit to young and old to learn from that inner passion you and your family hold for the sea and it’s natural produce is amazing. I have learned so much about the coast around my shore, my kids think I’m an authority on the shoreline, na... I listen to John... that’s what I say to them.. 🤘🇨🇭

    In the US there are lots of folks who are really picky when it comes to a fish’s bloodline. John Dory would be their ideal dream fish! Unfortunately, we don’t have John Dories on this side of the Atlantic 😢. Anyways, great job with the channel! Amazing video as always ❤️

      YES...PLEASE!!!!
      Some fresh-caught, Fish Locker Cod, Pollock or Haddock would be GREAT!!!!
      No-doubt it'll be transformed to "gourmet status" in Spargo's Kitchen.
      A month or 2 back, Hannah did a fish & chips cook-up video.
      If you haven't seen it...I recommend watching....it's AWESOME.

      Preferably with a dash or 2 of cayenne pepper. Of course, that's optional.
      If it's prepared in Spargo's Kitchen, he likely has his favorite batter recipes.

      - Jim is a professional chef and has been all his life. He was ( and still occasionally is ) personal chef for a local lord and his family. He is winding down his working now as he looks to retirement. 😊

    You asked for ideas. How about cooking up an Indonesian Steamboat? Very difficult to find a UK restaurant that serve one. The only one I’ve ever eaten was cooked by me at the table on a bottled gas camping stove. You can use all types of fish and seafood.

      www.wingingtheworld.com/malaysian-steamboat/ There’s quite a few TH-cam videos too. It’s similar to a fondu but the food is cooked in a stock. Does’t have to be fish and seafood but the one I cooked was. If you cook it indoors, things get very steamy!

    Just Wow John! The baked John Dory looked fantastic! Not so keen on the Panfried, purely because both of us are not fans of anything in cream. To my mind, cream spoils the texture & the flavour. Everyone to their own! It looked delicious with the onions, mushroooms & orange before the cream went in. I'm guessing Hannah's Dad has worked as a chef, from his excellent knife skills? He certainly did that fish justice. Nice one mate - stay safe & well. 👍👍😁

    It was great to see you catch them, plus the dolphins and Thresher Shark! Why did he remove the eyes before cooking? I generally leave them on, is there a reason we shouldn't?

      Hello Peter, I know what ya' mean. I usually don't bother removing the eyes either.
      I think he may have removed them for a "family" presentation.
      My wife & children would never touch ANY fish I prepared & served with its' eyes remaining.
      I wouldn't think Hannah is "squeamish"...but James might be.

      green (Spanish) olive in-place of the fish eye...just before serving.
      My wife & children laughed to tears :-))
      My daughter is now 30. She still says...every time she sees a green olive...she smiles
      and remembers that "funny" fish I served.

    Hi John, pass on to Jim, my sympathy regarding the Fish spike down the fingernail, I did the same with a hardwood splinter but with me, they removed my thumbnail lol. Is Jim a chief or is he self-taught, either way, he knows his stuff. love the filleting and the finished dish looked very delish, like many others have said, "you cannot beat fresh fish, especially caught the same day, when I boat fished out of Brid or Bridlington, I used to cook mine when I got home, Mind you there weren't that many to cook Lol but I did catch a Brill one time and a bloke offered me £12 for it but I took it home, it was rather large. thank you john for another fine vid full of tips on cooking fish and what to serve with it. please pass on my thanks to Jim for a top demo. Also! if that was the thumbprint of St Peter then I would not like to meet him in a dark Whitby alley one night lol It was torture watching Jim serve the sumptuous Fishdish when all I had to contend with was a boiled Egg & Toast. are well!!
