Kuzhalappam - Traditional Kerala Snack

  • Ingredients:
    Rice flour (Roasted) - 2 cup
    Boiling hot water - 1¼ cup
    Grated coconut - 2 handfuls
    Garlic - 2 big cloves or 4 small
    Shallots - 2 big / 4 small
    Cumin seeds - ¾ tbsp
    Black sesame seeds - 1 tbsp
    Salt
    Oil - For deep frying
    Steps:
    Crush shallots, garlic and cumin seeds in a mixie without adding water or using a pestle and mortar.
    Bring 1¼ cup water to a rolling boil.
    Add grated coconut and a pinch of cumin seeds to it.
    Add rice flour to a wide bowl.
    Add black sesame seeds, the coconut mixture and salt.
    Mix well with a spoon.
    Add crushed shallots, garlic and cumin seeds and make a smooth dough out of it.
    Add more boiling water, if required.
    Add 1 tbsp oil and knead well.
    Cover and let it rest for 30 minutes.
    Spread a plastic wrap on the countertop or on a rolling board / use banana leaves.
    Pinch small balls out of the dough and make it to a smooth ball by rolling between your palms.
    Place the ball on it and flatten the dough to a disc by gently applying pressure with your palm.
    Flatten it to a thin disc using a greased rolling pin.
    The thinner, the better.
    Wrap them tightly around a wooden rod.
    Gently press the edges together to form a small curl.
    Slide it off the rod and set aside.
    Repeat these steps with the rest of the dough.
    Heat oil in a wok and slide in the rolled discs into the oil.
    Deep fry in batches till golden brown.
