    The black small thing you curious to taste is Djengkol. A type of bean. It’s a kind of food that you either love it or hate it😂. Rendang is the slowest and hardest dishes to make. In my fam, we cheat with the premix bought in wet market and using pressure cooker to tenderize the meat. But still it will consumes so much times and of course, not as good as the slow cook rendang😅

    yup.. nothing beats cooking your gulai and rendang in a wood stove. we got a gas stove at our house (in bukittinggi) but my mom will still need us to set up the wood stove to cook on them.... and i always use the wok afterward to make a rendang fried rice. there will always be some of the spices and oil left over on the wok.. so the best moment to make rendang fried rice is immediately after you done cooking your rendang.

    Yeah that's the real way to cook rendang. The coconut milk...was boiled with spices, then the nuat then cook it in rather low fire while kept stir it every now and then. There is a simplified version, by using roasting coconut called serudeng, and fried the spicies in the beginning to cut the cooking time. We usually cooked rendang this way in a big holiday, otherwise we just cook the simplified way. The taste is slightly different though. And another thing is...rendang even better the next day or few days later

    Few years ago, CNN named rendang as the No. 1 out of 50 best dishes in the world. Indonesia is where you can find the best rendangs. Where I am from, Singapore, our rendangs are mostly cooked with factory-made pre-mix. And being a purist, it saddens me.

    • @ayngelina
      @ayngelina  2 ปีที่แล้ว

      I think I may go to Singapore when my visa extension runs out. Do you have any food suggestions?

    • @ezz151
      @ezz151 2 ปีที่แล้ว

      @@ayngelina You can go to Marina Bay Sands (MBS) for Michelin-star restaurants and expensive food ( certainly overpriced & overrated ) in an almost clinical setting though. For Indian food, you may go to Sakhuntala in Little India to try their fish head curry. For a mix of Malays and Arabic/Moroccan/Turkish, I would suggest Sultan Mosque area in the evening - decent food and unassuming ambience compared to the snootiness of MBS. Most times, Singaporeans eat at Hawker centres found all over the island, any good taxi driver should be able to take you to a good one.

    • @ayngelina
      @ayngelina  2 ปีที่แล้ว

      Yes I am all about the hawker centres!

    Beef rendang dish does take a while to make a soft rendang dish, the spices seep into the meat. The process of setting the heat level of the fire and the size and quality of the pan also affects the level of maturity of rendang dishes in order to get good quality. like my wife, when making rendang, which is tender and the spices seep into the meat, it takes almost 2 hours more.

    • @ayngelina
      @ayngelina  2 ปีที่แล้ว

      I admire your wife for making it. I would take shortcuts as it takes so long to make well.

      The selection of cooking utensils and cooking methods with combinations of traditional instant spices have been widely sold in supermarkets and all you have to do is add other concoctions as a complement so as to produce the original rendang flavor without straying far from the taste of the original Padang cuisine.

    • @ayngelina

      If you wanna go to palembang dont forget to try kerupuk kempelang, its so different from another krupuk in indonesia, the make it from some macarel fish and not frying but grill it, usually the locals eat it with sambal terasi but if you cannat handle spicy eat it without sambal its still yummy im sure you will not dissapointed
