- Rendang was once voted the most delicious food in the world. Chef Archie Prameswara’s fascination with the popular dish, takes him into a culinary universe spanning Indonesia, Malaysia, Singapore and beyond. Archie learns that it was the Minangkabau in West Sumatra that created Rendang. He learns how cooking Rendang is a way of preserving meat for long journeys - borne out of the Minangkabau’s tradition of seeking knowledge and fortunes outside of their own villages. Archie discovers that rendang’s recipe has evolved in the past and even adopted an ingredient that was once foreign to this region.
Archie then traces the spread of the Minang people to Peninsular Malaysia, where he discovers a wider variety of Rendang, influenced by migration and intermarriage with local indigenous people. On his final stop in Singapore, Archie speaks to a young chef to learn how he is preserving and adapting a dish, steeped in tales of the past, for the modern world.

I wouldn't say "creative" ingredients since rendang is not always made with beef. Even there is a thing called "rendang 40 daun" using 40 types of herbs/leaves
Originally rendang 120 daun, there is a documentary about it. But after 3 days of foraging, unfortunately they could only find 50 leaves

Rendang originally comes from West Sumatra, but because the Minangkabau people have a tradition of migrating, it has spread everywhere. Therefore, rendang from West Sumatra and rendang from Malaysia are very different and we must respect them. same problem with pizza, originally from Italy but different from American style pizza. I think we have a right to claim it, but they have a claim to their version.

Rather unfortunate at 36:15 that while all other territory labels are correct in the modern sense (Negeri Sembilan, Sumatra provinces etc), in the Borneo section the entire western Borneo is simply labelled Brunei. If it’s supposed to be a map of the colonial era, Brunei would be accurate. But it looks like all the borders are modern, post WWII nation states.

Rendang dari bahasa Minang "Marandang" artinya memasak dengan waktu yang sangat lama. Awal masakan nya adalah Kaleo. Tapi karena kebiasaan menghangatkan Kaleo sampai santannya kering justru membuat makanan lebih awet. Maka orang Minang menyebut "rendang" utk memasak Kaleo sampai santannya kering.
Dan budaya ini dibawa ke semenanjung. Karena orang Minang merantau sampai sana.

di bahasa melayu kata randang juga ada artinya memasak menggunakan kuali besi , tuh ada di kamus bahasa Belanda - Melayu terbit di Batavia tahun 1600an.
Bahasa Melayu ini cikal bakalnya bahasa Indonesia nantinya.
Bukti tertulis lebih kuat daripada bukti lisan / tutur.
