    In Egypt we have something similar to turkish yufka sheets but in a crispy version
    We soak them in meat stock and drizzle butter or ghee and use minced meat as a filling instead of turkey meat or chicken
    We also cook it on stove top as a first step then continue through the oven 🤝😍
    Very similar recipe but the Egyptian version ends up crispy on the outside its called رقاق 😃😃

    Thank you so much! I’m going to try this over the weekend, as I just happen to have 2 turkey legs a friend gave me from her farm. I don’t have access to yufka, so I think I’ll use homemade chapati. I’ll let you know if it works. Be safe and be well.

    I think that your version of _banduma_ is better than the one served at the restaurant. The reason is that you shredded your turkey meat *across the grain* into bite-size pieces, while the restaurant left them in long strands *along the grain.* The latter is more difficult to chew.

      Well said, though maybe the restaurant was showing value for money, with the appearance of the large pieces. It just could have been broken up a bit more. Also, that looked like white meat, which is stringier than dark.

      @@bcraig7557 One should always cut/shred *across* the natural grain (fibers) of ANY kind of meat to make it more tender. 10:32 What the restaurant did *absolutely wrong* was that they shredded the chicken *along* the fibers of the chicken breast meat, making it stringy and unpleasant to eat.

    MashaAllah! We have similar dish called Tirit pita. We make it with same ingridients except wallnuts, and instead turkye meat we use chicken or beef or even lamb meat.

      @@TFT Yes we use yufka and dip it in the chicken soup and put one layer of yufka and layer of meat till complete the dish. Than we bake it in oven. I' m from Bosnia!

    Because of the bread element, though that's unleavened, it might be very generally categorized as a chicken and dumpling dish (with walnuts added). The appeal for me would be the bread texture in the rich poultry sauce--broth and butter combined constituting a sort of gravy--contrasted with and enrichened by meat.

      Beyadir Basil you can but it won't be same because bread will be soaked and ripped easily, but it will be delicious still, I use Lebanese Bread as a base for Lahmacun instead cook it under grill top

      Turkish Food Travel bende Mengen'de büyüdüm uzak degiliz ve banduma bizlerde yaparız hindi etiyle ama kaz etide çok lezzetli olur hatta fazla yufkalarda hindi/kaz(benim tercihim)suyu ile ki çok yaglıdır o su ıslatılır üst üste tepsiye dizilir tel dolapta tutulurdu (kışın yapıldıgı için kış kar sogugunda muhafaza olurdu) karnım açıktıkça kat kat ayırır yemeyi bırak lokum gibi yutardım❤️🇹🇷

    I tried your lahamchun and it was amazing. Been to turkey last year and loved your country. In India we don't get phylloo so can I use Rumali roti instead. It's a thin paper lik bread made with all purpose flour.

    In Albania we have a very similar dish which we call MESNIK or LAKROR WITH CHICKEN AND WALNUTS. We do not cut the pastry though, we layer the phyllo pastry (or home made sheets of thinned out dough) and do not dip the pastry but we drizzle the broth and butter with a ladle on the pastry in the pan. In the end it turns out like a burek and it is easier to eat and more presentable. I have no doubt Banduma is delicious but it looks like a mess. Nevertheless thanks for sharing.
