Martino (Belgium) on Sandwiches of History⁣

  • Oh boy, the comments section is might be a bit unhinged today. That’s because for International Sandwich Sunday we are making the Martino from Belgium. Ok, maybe the mere mention of that sandwich won’t set things off but when you see that is made with raw beef…yeah. In the past I’ve done the Cannibal Sandwich as well as the Ground Beef De Luxe, both of which used raw ground or minced beef. So, clearly I am ok with it. I do take some precautions in that I cut off the exterior part of the meat I buy (the stuff exposed to air) before grinding or mincing. That’s to mitigate a potential surface contamination. If consuming raw beef isn’t your thing, I get it. I really do. But this recipes calls for a lot of flavorful ingredients not just raw beef. Shallots, chives, parsley, capers, anchovies (jarred), tomato, lettuce…it really has a lot going on. Oh, and the other thing that might people up is the second sandwich I make in the video.     Love that you toasted the bread in the rendered beef fat. I imagine that beef tallow toasted bread - topped w/ sea salt, parsley, capers, and red onion would be the ultimate 'toast'.

    I have to be careful with my diet currently, but I’d definitely eat that sandwich without the raw beef. I get my eggs from a friend who is friends with chickens, so I’m not as worried about raw or runny yolks. I have all those ingredients, even those specific potato chips. It looks tasty, so thanks for a good meal!

    Glad to see that burger, I figured that mixture would be nice cooked as well.
    That said, I've enjoyed raw beef and egg in South Korea and Japan, I could see this being very nice!

    Thanks for making this! I had one in Belgium about 15 years ago. I just asked the person at the counter what the best local sandwich was. I ordered a Martino based on his recommendation without asking what it was. It was delicious.

    One note on store-bought steaks: They don't have to label whether they are blade tenderized. If they are, this means bacteria from the outside of the meat has been transferred into the meat via the tenderizing blades and it's not save to eat raw or rare. Make sure you get your steak from a butcher who knows whether their steaks were blade tenderized!

    My dear old Granny would have loved this sandwich! She adored steak tartare and I can remember being a youngster and watched her eat it in a restaurant with astonsihment! I have never had the courage to try it myself, but applaud this effort -- I just wish my Granny was still around so I could make it for her.

      You know I was thinking about it and Sausage making is a big deal where I am from, German settlements here years ago... and the old guys who would make it homemade - at least some of them I knew, would taste the seasoned meat that was run through the grinder directly from the holding pan. Not all would do this, though.

    YES!!! As a mostly meatatarian, I love French (or Walloon) beef tartare! YUM! The sliders look good too.

      Always wanted to try out raw beef such as steak tartare! So many people are against it but it really depends on a lot of factors.

    That looked like a pretty good Martino. I'm from Belgium and I love this sandwich. Its's a real flavor bomb but to be honest it's getting hard to find good ones over here. But your version looked pretty good. A really good variation on this is the "Tonijntino" which switches out the preparé americain for tuna salad. So if you're squeamish about eating raw beef that one is a good option.

    The sandwich looks good to me, but I would definitely have baked that filling into a meatloaf.

    Great job as usual, Barry! I love a good tartare and, other than the anchovies (overkill IMO), I was with you all the way... including the smash burger version. Well done with the chips, too!

    Lived in Brussels for 8 years and saw American Prepare and Martino all over (you could buy so many fresh premade sandwiches at places like Delhaize or Carrefour)
    Never saw it with the anchovy, but the smos (lettuce, tomato, boiled egg) was on point. What I actually think this is missing is a layer of thinly sliced pickles / cornichon. IMO it's the acidity from those that really bring it all together.
    As an American, it was tough to get over all the raw beef at first, but never once did I get sick from it, and almost every time I thoroughly enjoyed it when it was done properly!

    I'd just like to point out that even with the regular, widely available eggs, your chances of getting salmonella from them is slim to none. I never give it a second thought.

    My husband, and his father before him, eats what he calls cannibal sandwiches. Very lean, high quality ground beef on a slice of fresh bread, open face. Me, no thanks, but he loves it every few months or so. 🤷‍♀️

    I think I would sous vide a steak to the lower limits of rare for a few hours before grinding it. Call me a coward if you must, but it would just make me feel a whole lot better about eating "raw" beef.

    As a German who quite enjoys his occasional Mettbrötchen (basically a bread roll with spiced raw minced pork and usually diced onions) I approve of this. I would probably swap the tomato for some onion though.
