For 38 Niouk Yen
Ingredients:
8 Chayotes
25 g Dried Shrimps
3 Whole Shiitake Mushrooms
20 g Rice Vermicelli (Optional)
100 - 120 g Tapioca Starch (2 TBSP per chayote)
2 TBSP Fish Sauce (can substitute with light soy sauce)
Sesame Oil (optional - add flavours)
Spring onion to garnish
For the Sauce:
1/3 Cup Light Soy sauce (low in sodium)
1 TSP Lime Juice
1 Garlic Clove
2 TSP Sugar
1/4 TSP Sesame oil
1/4 TSP Sesame seeds
1 TBSP Spring Onion
Note:
For 8 Chayotes, after grating and squeezing the water, we got around 555 g.
The amount of Tapioca starch will depend on the moisture of the mixture and also the size of the chayotes.
There are a lot of varieties of Niouk yen, you can also add minced half cooked meat or make it vegetarian.
