poached eggs on smashed avocado

- Who doesn't love smashed avo for breakfast accompanied by poached eggs. Healthy easy start to the day made in less than 10 minutes and 1/4 of the price of the local coffee shop.

Ingredients
2 fresh eggs
1/2 lemon
1/2 avocado
Turkish bread
dukkah
Method
bring a pot of water to a gentle simmer there should be no water movement just little bubbles. Slice your bread and toast it in a toaster or under a grill . Slice the avocado and mash onto the bread once cooked then Season with some dukkah.
To poach the eggs its important to use fresh eggs as there is less water in the egg white and it stays together better when cooked. Crack the egg over a double sieve and then tip the egg into a small bowl or ramekin. There will be a watery substance that falls through the sieve this can be discarded.
In the boiling water slowly tip the egg into the water then use a spoon handle to gently brush the egg towards itself this will help to keep it together . Some people like to use vinegar in the water but I think it makes the eggs slightly rubbery and can leave a taste behind and I don't see that much difference in the results so I don't use it.
Let the egg cook for 3 minutes then remove and dry with a paper towel. If you care about the aesthetics simply trim the extra bits with a pair of scissors prior to serving. For a less running egg cook for 4 minutes. Season with salt and pepper and squeeze fresh lemon juice over the top and you delicious healthy breakfast is ready to go !
