    Great video! I love seeing mom & daughter working together - this world needs more families like you! Just some of my personal tips: no need to sterilize your jars if you are using a pressure canner - the internal temperature of the canner at 10 lbs pressure is 240 degrees, and higher for 15 lbs (killing bacteria is 210-211 degrees). When water bathing or steaming, I sterilize my jars in the oven for 20 minutes at 220 degrees. And don't boil your lids - hot water is more than enough so they don't get damaged.

    Wouldn't it be wonderful if every young lady was raised this way!! Your children have had such an amazing start in their lives and a strong foundation to carry them forward.
    I taught living history 1840 life skills for many years and I still see some of the young ladies from those classes. They are now grown and they are passing what they learned on to their own children now.
    My Mom and my Granny are both gone but the knowledge they taught me is thriving. To me, it's a way to honor their memory.
    Your memory will live on through many generations as your children share your lessons with their own children and grand children.

    I would love to have lessons in person on doing this. In my 50s and never really was exposed to this when i was younger. I'm grateful for the you tube videos. But nothing can replace the in person experience.

    You know im73 yrs.old and this brings back such memories. I remember going to the root ceiler and digging carrots out of the sand in the barrel of root vegetables. Glad to see it still exists. Grazie mille ciao franco

    Your daughter is amazing! I love that she's doing all of this herself with a little help here and there. She is learning what I call a lost art. Preparing your own food. Later on I've invest in All American Canners- I have two 31 quart AA canners. Each canner will can 14 quarts, so I run two at a time and can 28 quarts each session. I don't like store bought canned chicken, it's loaded with salt. I have been caning meats for years and love having it in my pantry.

    I keep my jars on a sheet cake pan in my 175* oven until I need them; so much more convenient.
    I’m so impressed with this young lady, well done mom!

      I put them in the oven in my lasagna pan with about an inch of water in the pan at 225 degrees.

    Love love love that she is doing the canning! Something young people need to know! Only because others learn from you, perhaps remember always always open the canner lid away from you so that if steam is built up it doesnt come up into face but rises at back of canner. I know she said it sat for couple hours, but better safe than sorry😁

    Wonderful job! I have done this for years. Now is a great time to preserve some garlic,onions and herbs from the garden in your jars of chicken. I made some orange chicken broth from bones and oranges that I needed to use up.

    May i make some suggestions and warning.
    1. Wash your jars with hot soapy water and rknse well first.
    2. Put a thin coat of oil on your rubber gasket to protect it. .
    2.also check the place where you put the jiggler to make sure lime and calcium build up is not clogging the hole..
    3. Fill your canner with no less than 3 quarts of water. You run the risk of running your canner dry and it will ruin your canner.
    4. Salt is only for flavoring. It has nothing to do with preservation process. You can use no salt as well.
    5. Never let you processed food sit in canner over night.

      One more thing, the new lids should not be boiled, it will weaken the seal.

    Wow we do canning so differently in the Uk. I boil my jars immersed in a huge stock pot for 10 minutes. Whilst still very hot I fill them and add lid. I then return them to the same huge stock pot and bring back to boil. Adjust temperature to a rolling boil for 40 minutes and 60 for large jars.

    Had my 11 yo daughter watch some of your videos and now we are learning to can together! She helped me make some strawberry freezer jam and did all of the jar filling, cleaning and when all of her lids sealed she was thrilled!

    Your daughter is so smart. I wish I had passed down this knowledge to my daughter. Not too late though. I’m 62 and she’s 33. We hope to can some chicken and beans this winter.

    So glad to see the younger generation learning to can. Your daughter is doing an amazing job. Canning meats is by far my favorite things to can. Here are several things to think about when pressure canning - 1 - it is no longer necessary to sterilize your jars, lids and rings if you are pressure canning; 2 - your canned chicken will taste even better if you use the broth you cooked the chicken in in lieu of water; 3 - when canning especially pressure canning keep this in mind.....hot food, hot jars, hot canner (hot pack) and cold food, cold jars, cold canner (cold pack). Jars are super hard to come by and I'd hate to see you loose one full of food to thermal shock.

    I just found your channel last night, I really enjoy your videos. Watching your daughters help you in the kitchen, prepping, canning fixing meal is very heartwarming. My daughter's are 35, and 30, with their brother in-between. My youngest bought me a American 921 and Wow! I love it! The kids are all married and have their own families. My youngest lives close enough to still come over to help me do many of the things you and your family do. My oldest is in Peoria and does what she can with two young ones. I miss those times of working in the kitchen with both my girls. Treasure this time together as you train your children to not just survive but to thrive in life. The Lord gives us wisdom to teach our children in His Word and in the Home. Your daughter is amazing! God Bless!

    I started canning this year and it really is a completely different experience. The taste, texture, everything is so totally different from buying it already canned. Plus the added benefit of knowing exactly what's in it. Good for you to take the initiative. BTW, I have found that I prefer to raw pack my meats because it's just so crazy easy

    Hello from our farm in New Hampshire! New to your channel. I am so encouraged to see the lifestyle you are living and teaching your children. I am an original Mother Earther, farmsteading back in the 1970s. Elliot Coleman is still going strong in Maine. We are working our 350 acre farm, well into our 70s. Grass fed beef- hay- logging- firewood and organic gardens. I teach the odd workshop in sustainability, but it is just the three of us running the farm.
    I have a 6 qt Instant pot and an All American pressure canner, but have not tried canning chicken. Next on my list for fall cooking. We also have three freezers. They are full, so I see the value of canning meat. Since 2020, I have concentrated on stocking our dry pantry and freezers for both properties. That is finally accomplished. A neighboring farm supplies us with organic chicken. They are delivered in frozen halves, which is perfect for my smaller Instant Pot. When they arrive, I will try canning chicken. Your " how to " video is excellent and easy to follow! Thanks for taking the time to share life on your farm.     Wanted to tell you we invested in a home freeze dryer. This also saves freezer space. We have freeze dried chicken broth, eggs, veggies, fruit ,our goat milk, and so much more. Freeze dried food is supposed to last I believe 25 yrs. When you rehydrate it it still taste fresh and really good. We purchased ours from harvest right freeze dryer‘s but I’m sure there may be more out there. Some Homesteaders called living traditions homestead even freeze dried ice cream sandwiches which they said were absolutely delicious.

    I've been doing this for several years now. We absolutely love it. My grands come up they grab a quart and ask for chicken quesadilla s right away! Lol. We also do white meat pork. Pork loin. It is just as awesome and makes a mean pulled pork bbq sandwich

    Save the liquid from cooking the chicken and make the bone broth with it. You can also pressure cook the bones for 2-3 hrs in the instant pot for bone broth.
    Edited to add: don't boil your lids, the rubber gasket is thin. May not keep a good seal.

    Once canned it is done. I have several jars of home canned chicken it saves me so much time making casseroles and soups. I love the taste and the ease of canned chicken. When you make it the next step is the bone broth that tastes amazing and is so good for you. This has become my favorite thing to can.

    I have 6 chickens in my freezer now to roast in the oven. I will roast them so the meat is still a little pink, then they'll come out of the oven. They are cooking in the pressure canner again, and I don't want them dried out any more than they have to be. I prefer raw pack chicken, but whole chickens have been on sale in my area, and a partially cooked chicken is easy to de-bone, plus you get bone broth later. Great video! Canning whole chicken is such a blessing to have on hand.

    Absolutely true. We went on vacay for 10 days to come back to our freezer quit working while we were away. Lost a full freezer of meat. Not to say anything about the smell.

    I stumbled upon your channel when it came up in my TH-cam feed. I love the way you all work together - it's something that is missing in modern lives with everyone running around in different directions, doing their own things.
    I'm in England and we don't have the same tradition of canning that you seem to have in the US. So, it really is a "lost art" (as one of your other viewers commented) and most people are dependent on the supermarkets.
    I bought an AA 930 pressure canner and all the supplies for my wife as a Christmas present but we've not used it as much as I thought we would. It may surprise you to learn how expensive canning supplies are over here. Apart from the initial price of a product, transport and customs duty are added which even makes jars a silly price (They're currently about £18 for 4 wide-mouth quart sized jars).

    Yes it's convenient. I've also had a friend ask for chicken soup and broth too see them throughout colds they had. I buy 7 oz. Bags of 1" pieces of Angel air pastas too make and can chicken noodle soup. It cooked up better and doesn't melt away. And I also vacuum seal soup mix then put the 1/4 inside the wide mouth pint jar of pasta and vacuum seal that one too. Meals ready for bug out bags. Plus your can pour boiling water and soup mix into the pint jar stir good and then seal the lid for 10-15 minutes and it's really too eat .

    It’s good that you are teaching your girls how to can. My grandma used to can when she was alive and I wished I had paid attention. But, I did teach myself how to water bath can still nervous about pressure canning.

    Wow! This is so great to have on the shelf! I raw pack mine which saves a lot of time and allows me to do it in bulk.
    One safety tip...always open the lid away from your face to keep from burns!

    I love home canned chicken! Usually I put 40-50 lbs in 2 big electric roaster low &slow-debone(refrigerate) then throw bones in with veggies ACV water herbs and cook low about 36 hrs -strain put in fridge-fat solidified on top when cold scoop it off then can it all up! I can chicken in broth then I still have lots of broth to can as well!
    So easy to throw amazing meals together very quickly! I’ll try your process with Instapot next time- it might save me some time.

    I've really enjoyed watching your family videos. Thanks for all the info you provide.
    I wanted to mention to you that, if you leave jars in the canner overnight, you do risk something called flat sour. It isn't dangerous but it can cause the canned food to have an off flavor. I recommend following the prescribed method. Once the canner has released all pressure naturally, remove the weight and let sit for five minutes, then cock the lid and let sit for five minutes, then remove jars to a towelled surface (a naked, cold countertop can crack jars) to cool overnight.

    Chicken enchiladas with green sauce from home canned chickens is a great use for home canned chicken. I've bought chicken to do it, but haven't had a chance yet.

    I find that jars that have had meat in them do not always get clean in the dishwasher so I end up washing them by hand. For that reason I prefer to use wide mouth jars.

    Thank you for the vinegar tip I live in Tennessee and we have hard water and I hate pulling the jars out with the dusty film all over it .

    Canning the chicken in its juice itself you can water that juice down a little bit but it would taste a lot better

    I threw out the catalogue today but it was one of our suppliers for bottles so I'll get another one. You can order the Jars wholesale and have them delivered. I also found Ball lids at Menards over the weekend. First time all year! Love the vids...

    I have been water bath canning for several years, but just started pressure canning last year (my canner sat in the box for 5 years because I was so intimidated). I canned boneless skinless chicken breasts after watching several videos using the raw pack method. It was so easy even though I didn't have any skin and bones for broth. I do have bones and skin in the freezer to eventually can some.

      @@deerpark39 Get it out! Watch some videos and just do it! Canning meat is the easiest thing. Just follow the instructions and the process and go from there.

    I think it’s awesome you take the time to make bone broth too. I usually make bone broth once a year and freeze it in silicon muffin tray, to make broth cubes for cooking. I never tried canning maybe I will this year, thanks for the tutorial.

    Shes so easy to watch, really informative and pleasing to listen to. Excellent resource for newer people . Ive only raw packed chicken and beef and its so delicious we just want to keep eating them as fast as I can can 😋them. Lol.thanks for a great video xxoo

    It’s delicious and you can cut your chicken with your fork! It my third year that I canning chicken , in the beginning my husband said : it’s a lot of work, store sell chicken but the first time he tasted it, he ask me to don’t miss chicken like this! Me, I put raw chicken in the jar and canning it 75 minutes and wow!

    Your daughter is such a pretty young lady and she is doing a wonderful job canning for your family…I was also taught not to leave the product in the canner after it was completed longer than 10 or 15 mins because it can food can go “flat”..

    I just got my All American Canner shipped to me a couple weeks ago. It’s a bit daunting! My daughter and I have examined it from all sides! 😁 I’ve been trying to decide on my first canning project. I may have to try canning chicken!
