I used to love chocolate but it kept me awake. Just the amount in a chocolate chip cookie is enough to keep me awake for 2 to 3 nights. I haven't eaten chocolate in many, many years and I do use carob. I have found that if you use a little dandelion coffee substitute, it makes it more like 'chocolate'. I made a German "Chocolate" cake for a group of people at a seminar. Some wouldn't try it because it looked and smelled like chocolate but when I told them it was carob, they enjoyed it greatly without the unwanted after-effects. So, use a little "Dandy Blend" or other dandelion coffee (gluten-free too) or cereal coffee substitutes like Roma or the like to give it a more chocolaty flavor.
I’m so used to it by now and I truly enjoy it. That’s a great idea, though, using the dandelion. My husband is thinking of trying the Dandy Blend but he’s afraid he might not like it and they don’t sell tiny sample bags of it. Does it have a real coffee flavor?

We’ll be traveling to London in a few days and I made up a THICK paste (think ALMOST LIKE PLASTER) of carob, honey and a bit of salt to take with me. I don’t want to go without being able to make chocolate (carob) milk or hot carob cocoa while I’m there. It honestly looks like I’m carrying a soil sample in a container. 😆. My dogs are obsessed with chocolate and I know they can't have it but I make carob brownies occasionally that I can share with them. Just buying a little love from them since they are mama's girls. Sometimes daddy wants some snuggles too.
the headaches could be from stomach acid reflux splashing up and hitting a nerve that runs up behind the ear. so anything acidic or foods bad for acid reflux could cause it
Thanks for your comment. That could be a possibility but I think I’ve actually nailed down the cause and it was a supplement I was taking for a while. Since I discontinued it the headaches are seldom a problem. They are debilitating at best so I’m so grateful they’ve all but disappeared.
Carrot? Hoping that was a typo. I buy CAROB powder but if you know how to make it then it might work; I’m just not sure. I’ve heard that carob powder in other countries tends to be a bit grainy instead of silky smooth like I use.
The powder was readily available locally and that’s why I started using it. I just looked into the syrup and Azure Standard actually sells it! Thanks for the suggestion!

I use carob instead of chocolate, I can not have caffeine, my dr told me about it 10 years ago. It's good. I love my chocolate milk also. Go's bless.
