That bread hack technique had my mind = blown! Thanks for the awesome tip Mason, whenever I make grilled cheese sandwiches or something and I place it evenly on the plate, the bottom part sogs out quick due to the steam escaping and it feels rather sloggy when eating, so this technique will be very handy.
There is so much flavor in this recipe; great list of complementing ingredients. I feel like I can taste the sandwich already and want to eat two more. Man, this has reached the apex of my tryout recipes. Don't you hate it when people comment on a recipe and they haven't even made it?
I met Mason at Molly's one morning and he was the nicest most genuine person. It was our sons 5th birthday, Mason heard and gave him an awesome vintage Indiana Jones McDonalds toy as a present. Food is amazing as well.
Mason is such a chefs chef. I love that he took it off the menu after the article. Reminds me of the gnocchi we had featured in an article only I could make. A fun special turned into a months long tedium.

Literally 2 days ago I sliced off a chunk of the tip of my middle finger with a mandoline and now seeing him use one so nonchalantly makes me mad and scared and impressed all at the same time.
It just comes to many people who've been working with food long enough. Mistakes happen, but the more experience you have using it the safer it is to use. Definitely use a guard whenever possible if something doesn't feel safe (slippery stuff like onion for example). Only reason why he was doing it like that was because he has to prep quite a bit of that daily vs a few sandwiches here
