Kay, just as a tip (or two) for the future. If you shred the carrots or finely dice them (probably harder on your wrist, so maybe use a box grater to shred them) they’ll cook faster and more completely and will blend better with the mince and if you cook the onions at the sides of the pan, over low-to-medium heat, they’ll sautée better because onions do have a surprising amount of sugar in them that will caramelise if given time, which adds a nice breadth of complexity to the flavour. Finally, the best piece of advice I can give from watching many videos is to “not overcrowd your pan” as my father (who was a cook) taught me as a child. Your food won’t cook properly if it’s steaming and not frying or sautéeing.

But cooking ingredients separately when they need actual frying has been a game changer. It's the difference between savory maillard-reaction vs. everything steamed.

Kay a Tip for you. If the acid from the tomatoes sauce and paste is too much. Add a little sugar to the sauce. Do it by taste. I have ulcers and it really helped me enjoy my tomato sauce. Without the tummy pains.

I recently become a professional chef and I'm not too proud to say I've learnt mostly everything from you and your videos, I now use Oregano on literally everything now. Medium rare Chicken with salt and pepper is the only ingredients I ever need. I've never been violently sick with it. I also agree, never add the stock. Much love xx

For future reference, try to remember to wash your hands after handling raw chicken - it's perhaps one of the riskiest things to contaminate your kitchen with, and you can get seriously ill. Also, would you please try making my family's recipe? TOOLS a big pot spice/tea infuser, or piece of cloth to put spices in INGREDIENTS 1kg beef - some cheap cut, like stew chunks, or a roast that was on sale - it doesn't matter really 2x 500ml cans beer - can be stuff you wouldn't want to drink. more is fine but don't get less 1 bottle pickling spice - you can use any storebought blend you like. pickling spice usually contains mustard seed, various peppercorns, and allspice. i recommend bay leaves too. mayonnaise/miracle whip, if you like it soft burger buns/baps, the cheaper the better, you want those real soft white ones lots of napkins, maybe a bib optional: regular salted potato crisps are really good with it DIRECTIONS 1: put the meat in the pot with enough water to cover the meat, and add half of the beer. 2: put half the pickling spice into the infusers/cloth and secure it, then add to the pot. 3: simmer it for at least 6 hours for a full roast, adding water if it starts to get too low. if any foam comes to the top, skim it off with a spoon. 4: take the spice infuser/cloth out and throw the spices away. wash the infuser/cloth and pot to reuse. 5: let it cool (put it in the fridge overnight if you want) and shred it, taking out any bits of fat or gristle you dont want. 6: prepare another infuser/cloth filled with the rest of the pickling spice. 7: put it in the pot, add the rest of the beer, and the spice infuser. simmer it for an hour or until it doesnt smell of alcohol anymore. there should be a good amount of juice/broth left. Now all there is to do is make your sandwich and eat it! slather mayonnaise on the bottom bun, put some juicy meat on it, and eat it as fast as you can before the bun gets too soggy. if you like it extra juicy you can dip the top bun in the juice. the recipe sounds weird but i've served it to a lot of people and they all loved it and asked for it again. it's a bit of a splurgey budget meal since there's beef involved, but it goes a long way. that being said, it's so good that if you don't freeze it right away, it'll just disappear from the fridge haha. hope you enjoy.

Minced Chicken is good mixed in meatballs, meatloaf, you can make your own chicken nuggets... just shape and bread some chicken mince with salt, pepper, and garlic powder. in fact I think I'll make homemade chicken patties sometime... that way I can make them with chicken thighs! Like MCD did in the 90's!
