BEST COMFORT FOOD! Beef Stew And Potatoes Recipe - Rustic and Hearty!

  • This dish is comfort food for the soul! Delicious chuck pot roast beef pan-seared and cooked with hearty, creamy potato wedges in a succulent beef stew gravy. It doesn't get much better than this! Perfect meal to fill your tummy on a cold, winter evening... or at any time. ‪@FunWithTheFabFork‬

    Ingredients:
    2 lb Chuck Pot Roast (Cubed or Cut Rough)
    1 lb Potatoes (Cubed or Cut Rough - Russet or Yukon Gold)
    1/2 Large Sweet Onion (diced)
    5 Garlic Cloves (minced)
    2 Cups of Water
    2 Cups of Beef Broth
    1 teaspoon Paprika
    1/2 teaspoon of Ground Cumin
    1 Cup Tomato Sauce
    2 Tablespoons of Corn Starch
    1/4 Cup Heavy Cream
    1 teaspoon Salt
    1 teaspoon Black Pepper
    Tip: Feel free to add a cup of green peas to this stew for extra nutrients and color. It makes a perfect addition to this already scrumptious dish! Yum!

      @@FunWithTheFabFork With the potatoes just cut medium size up into thirds then simmer till they are soft enough starting to break up a little. This allows it to soak up the curry adding to flavours. Make sure to brown off chopped ginger and garlic and caramelize cubed lamb / mutton with soy sauce before simmering away. There's a curry that's golden yellow in colour which is a brilliant match for this and flavour is so 😋.Make sure to leave fat in which adds to taste or optionally tilt saucepan to float up fat and skim a little away

    That looks like the ultimate comfort food indeed. My brother in law would be ecstatic because there in nothing visible other than meat, potatoes and gravy, as potatoes are the only vegetable he likes. Do you think adding some winter vegetables would compromise the deliciousness of the dish? I like veggies, myself.

      Linda, absolutely! There are a variety of vegetables and legumes that pair wonderfully with beef stew. Carrots, green peas, celery, sweet corn, and even Brussels Sprouts can all be delicious and very nutritious choices. Enjoy experimenting with your favorites! I would love to hear how it goes! 😍

    I have a hobby of trying to guess people's accents. You sound...Norwegian?
    Stew looks delicious by the way. Some ingredients supersized me, but it seems to make sense.

      Thank you for your comment, @hadronoftheseus8829! I am actually not Norwegian, but my best friend is Norwegian/Swedish by heritage. I think her Mid-Western accent could be rubbing off on me! LOL! I was born in Florida (U.S.), but have discovered that I have more of a nondescript accent. 🙃

    I'm not much of a cook -- when you put the meat back in at the end for a few minutes, that's like maybe 5 minutes? Enough to get the meat nice and hot again?

      Yes, just enough to reheat the meat is all you need. Probably 2-3 minutes would be sufficient. 👍
