I made red beans and rice for the first time. I am American so I kinda tweaked the recipe a little but for my first time making this it turned out delicious to me. I did watch a friend of mine from Bahamas make red beans 🫘 and rice so I felt confident trying this recipe. Thanks for this tutorial. It made preparing this recipe fun and easy.
It looks 😋. l washed my rice before I cook it, and l add 1 can of coconut milk and Bay leaf s to my rice. The canned coconut milk takes the rice to a whole different level of flavor.
Thank you Melda! I have been going to Little Harbour since 1978, I live in Ohio mostly but am in the island a few months out of the year! I love being home conch, crawfish and fish home to the states and sharing with my friends. I am always looking for great Bahamian recipes, thank you for all you do and I’ll keep cooking along side you! Blessings 🇧🇸
Thanks for watching my friend. That's the same name - these are pigeon peas. We sometime say peas and rice for short. I appreciate your kindness and support.
Yah boy! I love this vid. You can tell you love to cook, from "heavy food" to "light food", even down to the desserts. I am loving your channel. 🥰 Everyone must be have a set of these pots. 😄😄😄 They are great for soup, grits, and of course rice! Everyone have their special type of rice, and to be honest, I am a "grits" person, I'll admit, I ain no big fan of parboil rice, but if it looks as good as your pot, I would eat it. 🍚 I love the fact that you cook down your herbs, and add that thyme. 🥰 You can't have peas n rice without celery and that thyme! 😎
Hey, Whyly, I see you and thank you for the support. Yes it's that easy! Give my method a try one of these days and you will really see how easy this is. God bless and stay safe.
When i tell you i just made this today i followed every step except i double the celery and garlic and used a whole tomatoe and 3 tsp of tomatoe paste, oh and i added chicken broth....man this ting got so much flavor....i also made oxtails collard greens and cornbread.
Nice - a couple of things to try. You can fry out some bacon first and use the oil for the sautéing (extra flavor) - I would add the peppers before the tomatoes (better to sauté them than steam them), and fry out the tomato paste for a short minute before adding the peas and rice. Additionally, you could consider rinsing the rice first if you would like it less sticky. Either way, I’m sure the taste will be superb. How are you with conch fritters ?
Hello thank you for sharing, as I am living abroad and miss Bahamian cooking. A suggestion for future videos is if you tell us the cooking temperatures and how long to cook (or place them in the description with the recipe). It makes it easier to follow since I am a cooking novice. I have subscribed so I am looking forward to more videos :)
Thank you. It looks so delicious I am definitely going to make this. I am Bahamian descent myself born and raised in Key West, Florida, different family members always make this but I never knew how to make it. My grandmother used to make this and also guava Duff.. Also conch fritters on Sundays. ❤
Heyyyyy Catherine, welcome home and thank you for stopping by and supporting your family. I am so glad that we've found each other. Everything is here for you my cousin! Have fun and share my channel out now. I love you!
06/03/2023 - This is my second video I watched. I always wanted to see how this peas and rice is cooked. I like it and will be trying it for myself soon. Thanks for sharing. You cook very well.
Its been 38 years since I lived in Nassau but I still miss going to the beach on Sunday and buying peas n rice and conch fritters from the Bahamian ladies
Thank you soooo much! I ate this in Bahama almost twenty years ago but couldn’t find the recipe until you made this video. Thank you so much! I love this food!
Thanks for the channel Remelda! I've always heard negative things about parboiled rice. Can you share why you prefer to use it over the regular long grain rice?
Hello Gabrielle, thank you for watching and supporting my efforts. No sis, they are completely different. Maggi is a seasoning (in cubes or powder form, while browning is a liquid).
It is interesting that there are so many similar ingredients to "Arroz con gandules," but the taste is so different but both delicious. I always wonder how it was made. I will let you know how it goes when I make it! Thank you for sharing!
My family is from the Bahamas as well and I cook pigeon peas and rice for my family,I notice some recipes calls for coconut milk,or tomato paste.(what's the difference)
Hello Richard, thank you for watching and supporting my efforts. I appreciate your kindness. Allow it to simmer and finish up on low heat covered for about 5 minutes. God bless and stay safe out there now.

That is correct. It's very similar; however, the thyme adds a completely unique Bahamian flavor.

Hi Ms Remelda. I know this might sound funny but how do you get your rice to be one one. What do you recommend? My rice always comes out sticky for some reason even when I try to balance the water to rice ratio.
Hey Nathan thanks for watching and supporting my efforts. When cooking rice, start cooking it on medium temperature and reduce it as the liquid dries out. DONOT stir until ALL of the liquid is dried out. After stirring you should turn the temperature down to it's lowest, then allow it to finish up covered for about 5 to 8 minutes.
You are using too much water. It may look like it’s not enough; but the steam should cook the rice. I would cut the water in half.
