I made this today and it was great the chicken was falling off the bones tender (you didn't need teeth to eat it) and the flavor was great. Very satisfied with the results!

Thank you for the recipe. Im ilocano, we dont put sugar in our adobo. But tagalog do this and other regions. Infact, when I go to a filipino restaurant, I dont order their adobo coz I know its sweet. Adobo was introduced by the Spanish and its only vinegar, no soya sauce. Anyway, Im sure yours came out really deli.
Maybe Ilocano Adobo came from the Spaniards, but Tagalog Adobo came from the Chinese way before Spain came to Manila, and that's with soy sauce. It wasn't called Adobo then, the Spaniard Pedro de San Buenaventura just called it “adobo de los naturales” because of its similarities with their spanish dish.

In the recipe linked it says 1/2 a cup of water, but I did not see you use water in your video? Is this optional and if so is this thrown in at the beginning with all the ingredients?

It can have a BIT less flavor since you don’t use oil, but it’s also a great way to make it healthier without sacrificing in flavor!
