    RECIPE (makes 4 portions)
    ▪200g/7-8oz mung bean vermicelli noodles
    ▪1lb/.5kg boneless skinless chicken thighs
    ▪200g (¼ head) cabbage, cut into thin strips
    ▪100g or about 1.5c snow peas, sliced into strips
    ▪100g (about 1) red bell pepper, cut into thin strips
    ▪100g (about 1 med-lrg) carrot, shredded
    ▪15g, 3-5 cloves garlic, minced
    ▪100g (½) white onion, thinly sliced
    ▪2 eggs, beaten
    ▪Neutral oil (light olive, avocado, canola, etc)
    ▪Salt
    ▪Fresh cilantro
    ▪Scallions, thinly sliced
    ▪Sesame seeds
    ▪Sriracha or sambal
    STIR FRY SAUCE (stir to combine):
    ▪50g soy sauce
    ▪20g fish sauce
    ▪25g brown sugar
    ▪100g oyster sauce
    ▪150g water
    Soak noodles in warm water until soft (i soak the brand im using for 15-20mins)
    Prep the chicken by removing any excess fat then cut into thin strips. Cut and prep all veg, beat eggs, and mix stir fry sauce. Cut noodles into 6-9” (15-22cm) if they’re super long.
    Preheat large saute pan or wok over med-high. Add a long glug/drizzle of oil to pan and add chicken. Add a pinch of salt. Cook for 2-3min or until browned and nearly cooked. Transfer chicken to a bowl, return pan to med-high. Add eggs and scramble. When 90% cooked, add to bowl with chicken.
    Return pan to heat, add a drizzle of oil followed by bell peppers, snow peas, cabbage and a pinch of salt toss and stir to cook. When veggies begin to soften (about 2-3 min), add carrots. Cook for an additional 1-2 minutes until veg has taken on some caramelization. Transfer veggies to bowl with eggs and chicken.
    Return pan to med-high heat, add a squeeze of oil. Add sliced onion. Cook for about 60 seconds. When beginning to brown add garlic, stirring constantly for about 20 seconds. Add in soaked vermicelli noodles and stir. Add stir fry sauce, stir to coat and bring to a simmer and cook until noodles are fully softened. Add veggies/chicken into pan, ½ at a time, stirring and tossing to combine.
    Plate up and garnish with cilantro, sliced scallions, sesame seeds, and sriracha or sambal.

      @@AndreaCinnamondCreative I was just going to recommend the same thing! Using the mixer to get consistent results (seeing the dough climb, then clear the bowl and slap around the sides..) utterly transformed my ciabatta!

    Really LOVE this recipe. The whole combination is so good, the sauce, especially the sauce, is excellent. I've never had an occasion to use oyster sauce prior to making some of your recipes but now I will keep it on hand at all times.

    As a Thai this looks great. Capsicum may be a bit weird to me to put in Pad woon sen (ผัดวุ้นเส้น). If you could make a prawn version in the next episode it would be great :D

    Love making stuff with glass noodles. So easy and great at absorbing flavour. Also lighter calorie wise I think (and calories are defo gonna have to be considered this week since I have a batch of your brownies to munch through!)

    I love mung beans, didn't know there were mung bean noodles and definitely going to try them! This dish looks amazing, I do love pad Thai's sweetness, it's easily the most addictive meal to me, look forward to trying this and comparing them.     I tried the weeknighting spaghetti chow mien just last week and it was super easy, pretty cheap ingredients, and totally delicious. I meal prepped a big batch of it and it also reheated really well. Definitely gonna be giving this one a try too.

    I tried this today as I love the woon sen (thin mung bean thread) version at my local Thai restaurant but not a fan of their sweet sauce. Your savory sauce was on the mark!     Pad Woon Sen is usually a part of the rice-curry culture aka Khao Rad Khaeng (curry on rice). I have barely seen any Thai eating it as a complete meal although I have made it several times. My version always incorporates fish sauce...a really good quality fish sauce changes the character of this dish imo. When you are in Thailand next, I recommend you try a variety of 'specialty' fishsauce like those made from freshwater fish from Sukhothai Province. It's more pungent but the fact that they add a secret ingredient, pineapples, makes this type of condiment my favourite and I would use it in pretty much every Thai dish now.

    When I lived in Toronto a Chinese place down the street had their version of this called Singapore Noodles. A local place in Fredericton where I now live calls it rice vermicelli stir fry and it's closer to your recipe. They call themselves an Asian kitchen as it's got Japanese (okonomiyaki!), Korean, Chinese, Thai. They do EVERYTHING well and this recipe is my favourite of theirs.

      @@BrianLagerstrom Hi Brian. No, you didn't miss much. For me, I don't add bell pepper, and I use green onion instead of white onion, and I use light soy sauce (healthy boy brand). I like your cooking method, though, and will give it a try. Thank you for sharing. Love your channel :)

    This noodle dish is one I get from the street food market near my place on the regular and your version looks legit. The bell peppers are a bit of an oddity because we don't have them here in Thailand, but every version of pad woon sen is a bit different so anything is fair game.

    I know it is not the point but vegetarian oyster sauce is a perfect straight swap for those wanting to keep this vegetarian or vegan (without the eggs). I did a side by side taste test a while ago and I prefer the vegetarian oyster sauce. They use mushrooms instead and as a result it ends up being a little lighter on the palate but no less flavorful. Much better, in my opinion, for day to day stir fry saucing needs.

    Wow! It’s look amazing, I’m Thai but I never done ‘Pad Woonsen’ before (I do ‘Yum Woonsen’ more often) This video kicks me out of couch to cook this menu. But I use leftover veggies and leftover slice pork instead 😊

    All your recipes are amazing - me and my partner have set target to go through all of them gradually, because whatever we try turns out perfectly! I especially appreciate how accurate the proportions always are!
    This is the 3rd time we make this one in particular, just amazingly tasty and easy.
    We know your wife eats gluten free - whenever possible, can you propose gluten-free sub for some of the recipes?

    I love glass noodles! Most of the time I make some free style styr fry with what I have available. But Would totally give your version a try! From first glance it looks good.

      Same. I always buy whatever's on sale and a bunch of frozen veg (I love water chestnuts but it's not always available at my local store) and this looks really good and easy.

      My Favorite use for them is the Sichuan dish Ants Climbing a Tree (yes, that's its real name). The spicy broad bean paste can be hard to find, but if you _can_ find it? *super* tasty

      Thats the best part about stir fry. See what you have in the fridge, chop it up and get frying. It’ll always taste amazing

      Glass noodles are technically not rice, but made from yams..no big deal though..

    My wife and I really like this dish. We also made it without the chicken and served it room temp for a side dish. I subbed vermicelli for the noodles for the side dish version as I was worried the bean noodles might not hold up.
