From plucking up the courage to start a TH-cam channel to share my vegan recipes 5 years ago, to reaching over 1 million subscribers & now launching the first episode in my DIY food & travel show made with my friend & colleague Tom.

I have long been inspired by tv chefs & personalities such as Anthony Bourdain, Action Bronson, Keith Floyd & Rick Stein, who travel the world sharing the beautiful stories of the local people.
I have longed for the opportunity to do the same but in my style & promoting plant based food.
The series Muy Rico will consist of 4/5 episodes, over the following few weeks & it will document the beauty & richness of Mexico & the Mexican people.
We had to start with an episode based on TACOS! See what happens when I create my own taco for local taco EXPERTS.

I live in Tulum and have seen so many vegan taco carts pop up in the last year its amazing! I drive by that one on my bike almost everyday and haven't tried it yet, definitely have to stop by!

When I spent a few months in Mexico I gained almost 10 pounds and I was eating vegan 😂, authentic Mexican food is so much better than most Mexican restaurants in the US

Not sure if you can call Mexican food in the US even authentic to Mexican cuisine. It’s best to keep both separate and still appreciate both for what they are, as they both use what is available to them to create or recreate dish’s from Mexico. Just food for thought.
Outside of Mexico, the only places to get good Mexican food is California, Texas, and New Mexico. But of course Mexican food tastes the best in Mexico.

Love this! When I first went to Mexico as a vegetarian in 2014 there weren't a lot of options, but it looks like things are changing 🙌 Can't wait for the rest of the series
I think the options were already there, but it's gotten easier to find them. I remember eating at an all vegetarian buffet near Tepic 20 years ago. It helped that my buddy and his abuelita knew I was coming so they asked around before I arrived.
I have always wanted to travel through Mexico and wondered if I would find Veg friendly places to eat. Call me naive but I would never have thought there would be vegan food carts there, Yay! btw I am Latina, and my family ALWAYS has at least 3 meat dishes at gatherings blah,.

These cooking traditions are a gift from our indigenous ancestors. Mexico is incredibly diverse and every region has its own traditions and cuisines. There's at least 68 indigenous languages in Mexico and I speak a little bit of one of them, Nahuatl! (the most popular culture to speak this language were the Aztecs, but it has existed before them). I've been to Tulum too and so far the best vegan tacos I've ever tasted were from there!

This video is beautiful! I've loved this type of content my entire life. But, ever since I became vegan, I stopped watching food traveling TV shows. It's still so difficult to find shows focused on vegan food. Thank you for this. It also reminded me a lot of my home (Northeastern Brazil). We have SO MUCH amazingly delicious street food. Maybe it could be your next destination haha

I'm from Los Angeles and grew up eating Mexican food. It's the best food in the world. I live in Thailand now and really miss the food from Mexico and the rest of Latin America. I'm so glad to see more vegans in Latin America since our food is typically very meat-heavy. I have been able to veganize all the food I grew up on but you can't get the same ingredients here in Thailand that they have in Mexico and Cali, I can't wait to go back to try all the new vegan restaurants!
After watching a replay of Chef AJ's, this came up and like we say here in Mexico, Avantegardevegan, you are totally CHIDO!!!! Chile rellenos filled jackfruit? Sounds scrumptious, being in the interior of the country, we don't see much jackfruit,which I understand is grown and more frequently sold in the hotlands(coastal plains and the southeast), but the jackfruit "meat", is this the fibrous white matter that coats the round cantaloupe-colored globules where the seeds are contained? First time I tasted jackfruit was in 2016, but ate it raw. Tlaskamati(thanks in náhuatl)for sharing, 👍and greetings 👋from Querétaro!🤠🌮

Hey Gaz, I've been following you for a while now, and today, scrolling through your videos, I came across why you went vegan overnight. Intrigued, I searched for Gary Yourofsky. I watched 'The Excuses Speech, 2014' and I have to say it made for uncomfortable viewing. I've been a meat eater all my life (I'm 55), toyed around with a plant based diet last year and used your recipes, but soon slipped back. But this incredible man, his passion and logically presented argument for veganism has utterly changed my view. In the space of 20 minutes I am now totally converted. We need to have more lectures and lessons in our schools and universities about this. Thank you for bringing this to my attention, and I'm really looking forward to my new lifestyle. I live in Mexico now and I’ve been to both places. Definitely Por Siempre is my favourite. I would recommend to check out huitlacoche quesadillas and tamales con frijoles. Btw. Every time I miss home food from LDN, I always end up here for inspiration. Thank you Gaz!

I find it interesting how much the vegan scene has grown in Mexico. I was born in Mexico and was vegetarian/vegan for 3 years almost 20 years ago. I remember at that time you could not find much information in Spanish. There wasn’t TH-cam or social media available, and people looked at you weird and made fun of you (including family) when you talked about veganism/vegetarianism.
I’m glad it is changing. I am currently starting my own journey into a more plant-based diet again. Love your content, and keep up the good work.
I love that you infused some Mexican history into your video! A famous Michelin star chef from Denmark (Rene ?? his name escapes me now) said that what he loves about tacos is that there are 1,000s of years of history in every bite! People don’t understand or fully appreciate the incredible history contained in Mexican food! Nor do they appreciate that Indigenous Mexican traditions survived 300 years of Spanish conquest, brutal slavery, denial of education & a purposeful attack by the Spaniards as they wanted to eliminate the indigenous people’s way of eating. Yet, still, these beautiful people retained and passed on their traditions. Tamales and Tlayudas have also been around for over 3,000 years, they’re pre-Hispanic dishes. Thank you for calling that out 🙌 Your Mexico series has been epic! Very well done.
Only just started watching and I'm excitedly hoping he learns about and brings some good Mexican food back. I lived in England for 14 years and the Mexican food there was the worst. Good Indian, though.

My Tia Mariya made us, her nieces from scratch tortias! Enchiladas and many very delicious Mexican meals. We were about 9 to 11 yrs old.
