when you battery 100% fully charged then go 3uTools it say like instant or boot idk which it has 4.40V... = longer lifespan but 4.37V limited after dropped, heavy use, problem = shorter, well lifespan and there reduce -0.1% performance.
if u have 79% health but peak is normal or good is ok
if u noticed peak is down.. no more "normal or good" = really limited and voltage to shorter

It's at 90% because people nowadays are Idiots and Zombies glued to their screen and have the worst charging habits. It's definitely NOT Apple's fault that people are so stupid to "break" the battery in a bit over 1 year. My 15 Plus was bought on Release day and has a bit over 100 cycles at 100% health... The 80% limiter is there for a reason. But the majority of users is just stupid.
