- This beet salad recipe is easy to make, comes together in 10 minutes, and is full of flavour from lots of herbs, pistachios, and a sharp salad dressing. It keeps well in the fridge and it's the perfect salad for summer BBQs. Beet tops, also known as beet greens, are completely edible and are used in this salad.
This is a great way to learn how to love the whole vegetable (and your whole self!). This a Pride month themed recipe video.

As a flavor cheat I sometimes use the seasoned pistachios (shelled, of course).
My go-to is the smokey BBQ pistachios. It adds a nice BBQ sweetness that is subtle but really brings a depth to the flavor profile.

Thanks for the kind comment! I started a granola business right after I posted this video, and then my dad had a stroke, and then I shut that business down… I’ve got a blog post about it on my website! I will hopefully start up again soon, but just been working through a lot of complex life stuff!

As for the business setback - you can always give it another go once you have recovered...a failure of a business is a fact of being in business...I have had 2 failures...the hard part was accepting that it wasn't a reflection on me and trying again...
