As a Hyderabadi, Hyderabadi biryani is my ultimate comfort food. When you smell all those spices and run to to the kitchen to check what it is and then your face lits up, That’s literal joy.
I was eating this the rest of the week and honestly I wouldn’t have changed that. Something so comforting, as you said, about all the smells and flavours it has 👌🏼
My favourite biriyani is Kolkata one, but Hyderabadi biriyani is almost equally delicious. The spices and the flavours hit really hard. Both types of biriyani are my comfort food, even Awadhi biriyani as well. The combinations and variations in biriyani are endless.
@@samseats one important thing you missed is or did wrong is you're not supposed to cook the marinated chicken, which is the uniqueness of Hyderabadi Biryani where it's supposed to be said as kacchi ghosht ki biryani, which literally translates to raw meat Biryani, where what we do is place the marinated chicken or meat just like it in the raw form in the vessel and it has to be a heavy bottomed one, and then the rice is cooked by draining method and then layered upon the marinated chicken then cooked on dum.
Something my mother adds to her biryani (that I believe has some good overlap with Hyderabadi biryani) is kewra water. It gives a really characteristic fragrance to the biryani which just makes mouths water. Incidentally we also use it tell when the biryani is done cooking - we wait for when we can distinctly smell the kewra water fragrance wafting from the oven (often after 60 mins or so)
You improved the recipe from the Biryani short vid. by a massive margin. This one looks and sounds more appetizing than any I've ever eaten. Definitely gonna try it out and share the results!!

Wow, this is such an interesting recipe! I'm from Pakistan and we love biryani here but I have never seen anyone make it with milk. It's so interesting how different regions have their own take on this amazing dish! I hope I can try Indian Hyderabadi Biryani one day.
@66yearsago88 yeah bro I know south India has a lot of non- vegetarians but just because you eat biryani a lot doesn't make it the national food of India. A national food would be something that people from all corners and cultures of our country eat a lot and maybe as staple diet. But since India has a bland of so many cultures annd societies that everyone have their distinct style of food and flavors and hence no single dish dominate the whole of our country eating habits. Hence it is very diffficult to call any food item or dish as the national food of India, even Biryani.

a good try but kindly do not take it as criticism.. the rice is a bit overcooked. When it comes to cooking authentic biryani each grain of your rice should be separate, whole, and visible. there should be no lumps of rice whatsoever.. a good way to do s is that if you are going to steam your biryani for 10 20 mins then in the boiling step you should take out your rice as soon as the water starts boiling.

mate first of all im not that old and i love cooking its one of my favourite things to do and you were my inspiration you made me want to cook more i tried cooking many of your dishes i cooked poke, biryani, steak frites and peking duck all of those dsihes were a success and all tasted really good you really are on your way to be a really really good chef keep up the good work dude
You can rose water and corn syrup for more fragrance. Also you can add the saffron infused milk layer by layer. To top it off add a little amount of ghee at the end.

In india their are Lot's of verities of biriyani. Actually every state have their own biriyani recipe. ❤❤❤❤❤and you should make dum biriyani,it is the pure form of biriyani. And dum gives you extra flavor and a very good aroma. Dum is a method that make biriyani rich and flavorful ❤❤❤love from kerala ❤❤❤

Loved the recipe🤗, in fact this is how I make biryani as well, however I'd just give a tiny feedback, you can try cooking the chicken before and then try and go for the layering method, that will ensure that the rice doesn't stick together as the rice and the chicken are already cooked and just need flavorings to get through to the grains of rice.

I am from Hyderabad. I love my moms biryani so much. I never saw my mom adding that much of saffron milk. Sorry that I am saying this but I think you used soo much milk than needed. Your Biryani looked a little soft and fragile than it has to be. Usually texture of Biryani is little dry and not that watery. It may be because of too much coking or water or saffron milk. Next time u make it don't use that much of saffron milk . BTW love ur videos from Hyderabad.
Sorry to say this but I used to like your videos. This is not biryani. This is some kind of dried risotto and half cooked chicken mixed together with remaining ingredients and heating it. The only thing similar to biryani are the ingredients u used. We don't re-cook food multiple times like english people. Don't take this seriously. It's just instant anger. But it's fine, since it's your personal take on it. Love your videos. Sorry and thank you.👍

You can also add salt to the onions before frying so that that water in the onions come out and they can remain crispy for many days
