Louisiana was still held by the French at that time (as was the entire middle part of America from Michigan to New Orleans) so they had a choice; stay in Canada and live under British rule, or pack-up and move to Frances' remaining territory in North America, Louisiana. Over the centuries Cajun culture was created and that is what he's speaking.

And they are found in our country just like yours all through our freshwater lakes and dams They are a delicacy over here but we usually just boil them up with salt n pepper We catch them with cotton string tied to meat or fish and slowly pull them in and net them Underrated meat
I feel like this man could live off celery, bell peppers, onions, lemons, potatoes, flour, and crawfish. Damn near every dish has the same ingredients, yet there’s a million twists on it.
It's been a couple years, but mom and I catch crawfish by hand. We'd spend all summer down in the holler catching crawfish in the evenings. Next time there is leftover boil I'm guna try this.

I made gumbo for years in a restaurant and used the same spoon for roux .. mainly because it wore down from scraping that roux until it darkened and the end of the spoon was squared off from all the roux scraping. Is that why you call it a "roux spoon" .. because its shaped perfectly for scraping the pot. lol.. probably a dumb question but I honestly just put two and two together and now my life is complete.
