Another way to thicken the sauce is to add a beurre manié which is just 1/1 butter and flour mixed into a paste. I keep a bag of them shaped into balls in the freezer just in case I have this exact situation and I need a quick thickener.

In my family, we don’t use flour or corn starch, but instead use Worcestershire sauce and beef broth to make a rich sauce. We also insert pieces of garlic into the roast and sometimes use garlic powder along with salt and pepper. The idea is to make sure the meat is well seasoned and the sauce full of flavor. The carrots also help add flavor, along with mini bell peppers and celery. The potatoes of course are also there. And being good Pacific Islanders, we also have a freshly cooked pot of rice on the side, along with soy sauce. 😉 I also like this version of pot roast, however. Mahalo for sharing! 😊🤙🏼
I really like your recipe. Being Meditarrian descent we use tons of garlic. I put garlic into pork chicken believe this or not our steelcut oats raw. It is so good and healthy. I like your idea better. 🙂
Ooooh yes I do it just like that too because I want it to come in it’s own gravy straight out of the oven. I don’t add potatoes with the roast because I serve it over a bed of mashed potatoes. 😋. I sear the roast with flour all over it this helps make a thicker gravy. Oh man it’s sooo yummy. Thank you 😊
Worcestershire and Beef broth will flavor your sauce, but they won't thicken it. You need some kind of starch to thicken it. You can use flour in the beginning and make a roux, or you can do as this cook showed and use a cornstarch slurry to thicken at the end.

@@rochelleholmes9271 I cook mine for 4 hours on high in the crockpot. Or 8 hours on low. If you use the oven 300-350 for about 4 hours should be good. I'm making one right now and has about an hour left. I'll let you know how it turns out. I use the McCormack pot roast packet with about half a packet of aujus seasoning and total of about 3 cups water. If u use the whole packet with the water it calls for its to much liquid in my opinion.
My mom cooked her roast in a cooking bag she put flour on her roast also along with the onions, carrots and potatoes. She would sometimes add cooking sherry too. It was my favorite thing she cooked. Thank you for sharing I'm going to try this.
I made this today - my first pot roast ever (I'm normally a steak kinda guy, but at the absurd prices these days am looking for things to do with less expensive cuts). It was FANTASTIC - the meat was so tender, and the veggies were just right. The only thing I did different was add some chopped garlic to the top of the roast after searing it. Making this right now. I don't have fresh thyme and used dried thyme instead. Hope that's ok. I didn't have long carrots, but a million thick baby carrots so using those with white potatoes. I hope all works out. Should be done by 5:30pm eastern time today. 😊 Thanks for the recipe!!
Usually when substituting fresh herbs with dry herbs, you only use about half as much in the recipe. Hopefully you realized that otherwise your pot roast may have tasted overwhelmingly like thyme and nothing else!
Been cooking for about 45 years and I have made pot roast and seen others make their version of this wonderful dish. I enjoyed this video. I just like to see how others are doing their thing! Anyway this is a classic and I thought she did a really good job. It wasn’t overly long or complicated. The chuck roast cooks up tender and delicious. One thing I want to mention, while she did touch on the slurry, for those that enjoy more gravy beef broth or Au jus can be blended with the roast juices/gravy and and thickened to the desired consistency along with salty and savor flavors if needed. The blending with the cooked juices keeps adding additional salt to a minimum. Nice video and simply spot on!!
This was a great chuck/pot roast video recipe. It came out perfect. I didnt use the mustard. And I added beef broth to the marsala. I make slits in the meat and put garlic inside before searing. Also used a little ground thyme and a dash of basil leaves vs what you used. Very good. Thank you for the concise and accurate video.

I place my chuck roast in a dutch oven add yellow onions and a few ribs of celery. salt pepper covers with beef stock and cook at 350 for about 5 hrs or until meat is tender. then add potatoes.carrots,mushrooms,etc. remove some liquid and thicken with cornstarch for a gravy. very simple and delicious!!
I prefer to cook my roast just like this, compared to using the crock pot. Something about cooking it in a Dutch oven pot makes it so tender and tasty. Love it!

I remember before my dad passed on his last birthday I made a chuck roast and he raved that I didn’t cook the vegetables with it. My mother always made a brisket and cooked vegetables with it and it was always delicious but I loved my roast. I’ll never forget that

I love how traditional American pot roast is practically the same as traditional British stew 🍲 instead you leave the meat together as a whole joint. Will have to try it like this for the winter now.

Great recipe. I use muscatel (a sweet sherry) not the grocery store kind, go to the liquor store. It adds amazing flavor. I had to make a vegetarian version of pot roast. For the veg peeps. It only took an hour i used 4 veggie patties 2 each on top of the onions and used veggie broth and of course all the veg. Carrots, potatoes, and celery.
This is great in a slow cooker also.. put it all together in the am. Put it on low for rest of the day . Good to go for dinner. I also add celery, onion, mushrooms. And a little wine..

This was fantastic! My wife is ready for me to make this one again soon. But we’ll have to wait and have company over otherwise it’s a lot of food. Cleanup was easy when done on the fly and we don’t mind our le creuset looking well used.
My american husband was wanting a pot roast, I had no idea what it was. I see it's pretty basic, so I should be able to do this. For some reason I imagined it to be very oily and watery and that sounded gross to me. But this looks doable! Guess I'll have to save this one to make later!

My mom taught me the corn starch and water slurry trick also. For me, pot roast must have the holy trinity: onions, carrots and celery!

I alternate between broth red wine and beer.

This was fantastic! My wife is ready for me to make this one again soon. But we’ll have to wait and have company over otherwise it’s a lot of food. Cleanup was easy when done on the fly and we don’t mind our le creuset looking well used.

My american husband was wanting a pot roast, I had no idea what it was. I see it's pretty basic, so I should be able to do this. For some reason I imagined it to be very oily and watery and that sounded gross to me. But this looks doable! Guess I'll have to save this one to make later!

oh trust me, that's the worst! That's why i used a silicone spatula to scrape/deglaze the pan and the metal tongs didn't touch the bottom ;)

Grace it looks like a 7qt in the video. I have a 5 qt oval (29cm) and it fits 2.5 lbs chuck roast just right.

I’ve used this recipe a few times now…..so easy and so good. Not sure what Marsala is….I used beef broth plus some red wine vinegar for acidity.
