Great take on that bone-in Turkey breast, man! You took a totally different approach to it than I did, I love it. I left mine whole so it looked more like a whole turkey, but I love the butterflied look (at least on a turkey breast-you know how I think it looks on a whole turkey, lol!) I also did a dry brine vs the wet brine. Best of all though is the slicing man. Very cool cook man. Such a treat to see the same thing done two totally different ways.
