Hey Max! There actually is something like a motion sensor in Minecraft, they're called Observer blocks! They monitor a block until it's property changes and send out a redstone signal. This would work for like observing crops grow and as it goes through each level of growth it would send out a redstone signal. (I'm not much of a redstone expert I just know observers are a motion sensor of sorts hope ya have a good day!)

You can make motion sensors with pufferfish and tripwires (because when the pufferfish expends, so does the hitbox) and if you set it up correctly, when a player walks near, the fish expands and triggers the wire
