I like how you become detailed when it comes to price estimates of ingredients used. This is what sets you apart from other celebrity cooking vlogs out there. Very helpful.

My uncle used to make this when I was young, and when I was lucky enough to be visiting him and my grandmother and he just so happens to make this dish I would go ham on it! Nowadays, I consider this kind of adobo my kryptonite. I haven't touched pork or beef in 7 years … (yes, I cry inside)

my lola used to make adobo puti , with sukang puti or sasa and asin as the main ingredient. She was saying that the farmers in the bukid do not have patis and toyo , so they use suka sasa or puti with asin, after planting rice in the fields , she said her ancestors also used this kind of recipe, she comes from Pampanga. She would also put cooked adobo puti in earthen jars or bottles and store them . The pork comes from their alagang native baboy. They would lay a big layer (about 12 inches lenght and 6- 8 inches wide of pork skin over their big kawali cooked over firewood, the oil produced some will be used for cooking the adobo, some will be stored and reused.

There is a big difference between Mexican and Filipino adobo. The main ingredients for Filipino adobo is vinegar and/or soy sauce and the main ingredients for Mexican adobo is chiles to marinate meat then grilled. Two different flavors.

People in the Philippines aldready cooking their meat in vinegar and salt as a way of preserving it, way before the Spanish came here. Adobo was the name Spaniards gave this dish and it came from the word adobar meaning to marinate.

Lingid sa kaalaman ng mga nakararami po, Adobo is an authentic Filipino dish. Hindi ko lang alam anong original name nyan, pero the process of preserving meat sa vinegar has been done by our ancestors pre-settlement era of the Spaniards pa lang. They preserve the meat tapos niluluto nila after. The contribution of the Spaniards is only minor, and that’s giving it a name hence ‘Adobo’, dahil na rin na meron silang Spanish na adobo na may similarities sa pagkakaluto sa kanila. Sa mga spaniards they use Garlic, Oil and Marjoram, walang Vinegar sa spanish style. The Soy Sauce component of it came from the Japanese nung nag-dala sila ng Shoyu during their settlement here and started putting soy sauce in our Filipino adobo.

    Hola Nadia !
How much salt and vinegar did you use ?
I had Adobo once in Spain, it was crispy pork pieces coated in flour but I could definitely taste some vingegar.
Adobo comes from the word Adobar " to marinate ".Please do more Spanish dishes.
