I didn't realize most of the songs from Ensemble San Felice's El Cant de la Sibil-la album were from this manuscript. Undoubtedly some of the most exquisite melodies I've ever heard. I really recommend that recording.

The songs in the LVM were created in 14th century by the monks of Montserrat (Catalunya, Spain) to 'suggest' pilgrims to sing religious pious music, as they arrived and, happily, used to sing profane (= not religious) songs to celebrate the conclusion of their way to visit and honour Our Lady.

Cantochão? A voz humana foi muito bem empenhada no cantochão medieval. Era o tipo de música permitido pela Igreja, se contrapondo a outras formas musicais que era populares. Pelos instrumentos presentes e ritmo não é cantochão, mas música popular.
I don't speak Spanish, but if I understand correctly your criticism refers to the way in which these pilgrim songs are interpreted. You're right, these were popular songs and orchestrating them like this is really out of place, but this is the style of Jordi Savall, a great musician and researcher but certainly not historically accurate.
