Hi Emilia, quick question: are you using two layers of baking paper, with the tin in between? So only the inner layer in contact with the cake needs to be really smooth and straight? Many thanks :)
@@djsubtraction1645 Hi! Yes, the double layer is on the outside, and the inside layer should be smooth. My cake tin has tall borders, which makes it easier, but if you don’t have one with tall borders, no worries-just cut your baking paper higher than your dough for the same effect. Happy baking!
Hi Cathy, Welcome to Little Kitchen. Great to have someone from the USA here! :) For your mix, instead of alcohol, use 2 tsp almond extract. If you prefer, you can swap it with other extracts like caramel, cherry, etc, In amazon in UK we have Rum Aroma imitation DR. Oetker brand, but this will be suitable for you if you don’t mind alcohol flavour at all :). Add it to your orange juice fruit mixture, then strain the next day and dab the fruits dry for the perfect texture! ❤❤❤
Hi there. Have just one query. I want to use rum as you do in the recipe. After I bake I don't want to use rum. So, can I use orange juice instead to feed the cake. Going to prepare it today. Thanks in advance.
Absolutely, go for it! Feeding the cake with 50 ml of orange juice and just 1/4 teaspoon of almond extract will give it a lovely lift-vibrant and subtly nutty. But here’s the beauty: even without feeding, your cake will mature perfectly. Just wrap it up, give it time, and trust me-those flavors will deepen and shine, especially with a few weeks left after Christmas. Either way, you’re in for a delicious result.🎄🎄🎄❄️❄️❄️
I’ve made it gluten-free in the past by creating a mix instead of flour: 150g almond flour, 100g rice flour, 25g potato starch, 1½ tsp baking powder, and ½ tsp xanthan gum - it turned out very well! 👌 🎄
