- JEMMA IS HERE!!! And it's time to make your Christmas Fruitcake! Yes, Christmas is still a way off but if you want a perfectly moist Christmas Fruitcake it's time to get baking so that you can spend a few weeks feeding it (with booze of course) to make it not just moist but to enhance all of those Christmassy flavours. But of course if you leave it late that's no problem either, you will still have a delicious Christmas Fruitcake.

8" Christmas Fruitcake
800g Dried Fruit (Sultanas, Currents, Raisins)
100ml Booze (Brandy, Rum) OR Orange Juice
225g Dark Brown Sugar
225g Soft Unsalted Butter
4 Eggs
225g Plain Flour
1/2 tsp Salt
1/2 tsp Mixed Spice
75g Mixed Peel
75g Glace Cherries
100g Nuts (Almonds, Hazelnuts)
More Booze or Orange Juice for feeding!

In the Caribbean we soak the dried fruits with rum for up to an entire year and puree them and takes only about an hour to bake.
I was looking for the Caribbean comment lol :) Trini girl here and I like to blend/puree half of the fruits and lightly chop the rest. Love a bit of texture in the cake. Your cake looks lovely... Time to soak my fruits!

What no wish, while mixing the cake mixture, as is traditional pre holiday baking?
we as children had opportunity to make a wish (often about what Santa would bring).
I did this with my own children and now they do same with their children today.
Queen does the same, each year too.
My kit arrived today, so excited... love the Bag... fruit is currently soaking w/ V.S.O.P brandy in my late nanny’s rum pot.
She taught me how to bake, but crumbs and dollies Jemma have inspired me to be more active in household bakes etc.

This years kit is slightly different as cherries are typical red store type glacé cherries… I substituted these with my organic dark glacé cherries similar to last season’s box.
