It is to simulate the durian dropping on the ground. Most durians nowadays are tied with string or drop on a safety net to prevent fruits from cracking open when they drop. However, they need this "knock" to release the seeds inside.
The hills of Balik Pulau definitely produce really good durians, plus there are many old trees here. Old trees produce more complex flavours... but of course certain species like Black Thorn and Musang King can also be found in other states like Pahang and Perak. I think Musang King from Raub is more famous but Penang has many old favourites like Red Prawn, Hor Lor etc.
