    Did some elderberry cordial yrs ago when my boys were very young used to have it hot in the winter. One yr we had one bottle left when one of my friends said she was going to do a party for all our friends children about 15 to 20. Mention I had this bottle left over from the winter and gave to her. Went up early on the day of the party to help when I arrived she was painting the kitchen. Short version, she opened it and it must have started fermenting and it went all over the kitchen. River cottage is very good, I got the recipe for chicken & leek pie some yrs ago and have made it many times but I use chicken breasts which makes a good amount for having guests over. Loved the video Vivi

    I know I had them as a kid but I can't remember what elderberries taste like. I do remember eating dark small round berries as a kid that had a sweet but oddly dusty aftertaste. Maybe that was elderberries. The flowers though, are spectacular and hold their own with any other flower.

      I'm hoping to make some elderberry wine come Autumn........I've never eaten them raw. Be very careful.....all other parts of the plant are toxic so only the flowers or berries should be consumed. :-)

    Great tutorial Vivi I’m almost tempted to give it a go this weekend.
    Regarding the exploding bottles, you could put some in your brew bin, less liquid to travel. I made some ginger beer recently which explodes all over the spare room, it took ages to clear up the sticky gingery mess from the wall,spare bed, and carpets, scenes from the exorcist looked less messy. On a more serious note there was glass everywhere . Hope you enjoy the fruits of your labour.

    You inspired me! So yesterday I went out into my back garden and picked flowers from my elderberry and started a brew. Not exactly the same recipe, but very similar. Glad to know that I got the right kind of bottles because some of the recipes mentioned only champagne bottles or some brand name and the ones I had were collected by a friend. I look forward to sharing a glass when you have your harvest party and at Christmas time.

    Sounds enchanting! I’d have to buy an elder flower bush since they’re not that common in California. But between that and the medicinal berries I think I’d be worth it! Can’t wait to see the finished product!

    A nice idea to use up elderberry flowers. There are always tons in the hedgerows. Just remembered dandelion and burdock wine. Never tasted it though.

      I haven't tried it as wine either......but it was my favourite 'fizzy' drink as a child. :-)

    Delightful. Cant wait. Just a tip with the yeast. In winemaking, the yeast is made into a sort of slurry first, and then gently added to the juice in one place, rather than mixing it. The idea is to get a strong culture going which then spreads throughout the liquid. In small quantities, this may not be such an issue, but I thought I may as well mention it. Good luck.

    I had elder flowers once, dipped into a mix of flour, eggs and perrier water, almost like a pancake mix, and fried afterwards
    It was quite good.

      apparently the way I tried is specific to some areas in America. It reminded me of Japanese tempura. I guess it's quite easy to make and each person can make their own mix. The perrier water or soda is important for the lightness of the mix.

    Wonderful! Reminds me of making illegal wine in the Middle East when I worked there! 😏You can make sparkling alcoholic apple champagne with apple juice, a pinch of yeast, and a bit of sugar in each bottle.

      What Vivi did next : I expect you could make it with windfalls. We made it with pre made grape juice , (I said apple in error, it was white grape juice.) only because it came in the bottles like you used , with the special flip down stoppers. I’m sure apple juice would work, or actual apples.

    Vivi, thanks again for good information how to make useful and healthy products!)) do you know the Latin name of this tree? We have several varieties, most of them are bushes, not trees... But yours is real tree, with nice flowers, and I'd wish I could find it by searching by Latin name... Thanks a lot in advance!

    Marvellous! I’ve always intended to make elderflower cordial (fewer extra bits of kit needed) but never seem to get my act together in time. Will you be doing another video on elderberry cordial in a few months time? I’d love to try that (act-getting-together abilities permitting).
    I got my late seeds in yesterday - my “chuck ‘em in and see what comes up” exercise. All free seeds, so nothing lost if it’s a failure. Kohlrabi, pak choi, wong bok (Chinese cabbage), white radishes, cylindrical beetroot and spring onions. Fingers crossed!

    Lovely! I’ve just made elderflower cordial - I had forgotten how superiour it is to the store bought variety. For anybody, please don’t eat the berries raw as they contain glucosinoids which are mildly toxic and can give stomach aches. When cooked they are perfectly healthy though :)

      Can't beat fresh, home-made cordial! Thank you for mentioning re the berries raw........I should have mentioned it in the video.......and that all other parts of the plant should NOT be consumed as they are toxic to us. :-)

    Hi Vivi. Hope the bottles are behaving themselves! Do you remember where you bought them from? I’ve made elderflower champagne for the first time this year and currently have it stored in plastic bottles, which I’m having to open twice a day to let some of the gas escape. Not sure I can keep that up for 6 months so glass bottles might be the way to go. Thanks!

      Oh, sorry, I can't remember.......but they came from an on-line shop.......I think I googled something along the lines of 'home brew champagne bottles'............as I recall there were loads to choose from. Good luck finding some at a decent price before your plastic ones go bang! ;-)

    Such a simple, great recipe. I like Hugh too.
    I think you have to stick a skull on every bottle so you don't try it before Christmas. Hahaha...
    My grandma was quite old when she died, and I was 6 years old.
    In the past, the kitchen was repainted in our area a few days before Easter, white.
    And then Grandma set currant wine. After a few days there was a terrible shouting in the kitchen. There were some bottles of Grandma's wine in the air. There was not much to see from the white kitchen. The wall radiated from light purple over blue, to dark purple. We kids were on the kitchen floor and laughing and laughing. The mama was a little upset because we laughed, but then she laughed too.
    Luckily, your elderberry champagne is not purple.
    However, the elder has long been in bloom with us.
    I'm very excited to see how he'll taste you in a few months.

      I remember that after cleaning my father had to paint the whole kitchen several times in a row.
      And I can't remember that after that, someone once again set up berry wine or champagne.

      The berries must not be eaten raw. They taste pretty disgusting as they contain a lot of tannic acid. But you can make a fine jelly, juice or cough syrup for the winter.
      I have mixed the juice of the berries with apple juice and jelly cooked for our nursery bazaar. All the glasses were sold. The jelly was delicious and looked beautiful.

    I remember when I saw those bottles in the background after you bought them. It must have been hard to wait so long to be able to actually use them! I remember asking you, when I saw them, if they were for Kombucha. Have you considered making that since then? Your costs would be similar, and it would be a self sustaining project! Great health tonic and you def get some bubbles from it also. I can't wait to see the "reveal" video where you crack one open! Your next project could be some mead with the honey from the bees on the plot - I think I remember you saying you get a bit of honey from them. My Great Nan/Grampa had a market garden and used to make Dandelion Wine and cordials, etc from the plants in their garden/property. It always fascinated me to see someone still putting those skills into practise nowadays.....although, b/c it's you, I'm not surprised ;) P.S. Don't worry, like has already been mentioned, you won't be consuming that sugar, the yeast will - think of it as a catalyst. You will get to enjoy the bubbles from all their gorging and "hard work". ~Cheers!

      Hahaha - a friend of mine who is a Shiatsu practitioner is always trying to get me to consume more fermented stuff including kombucha.......but it just isn't to my taste.....I'll stick with making wines I think. ;-) I'll open the first bottle of Elderflower with you all in a few weeks.........if they haven't exploded before then. ;-)

    Is it actually an alcoholic drink? Ive made the cordial before but not this.All the sugar required does put me off plus all our elder flowers are about 12 feet up this year! Hope it turns out as tasty as it looks.

      Hahahaha, yes it's alcoholic.......all that sugar turns to alcohol. I'm not a fan of sugar for preserving either (which is why I don't bother with jam) but I will make the exception for champagne. ;-)

    I assume no one owns the bush? Wouldn't it be better to leave the flowers and harvest the berries for jam and beverages? OK I see you only picked a small amt, I was envisioning a bushel basket full . So can you make wine out of any flower?

      Gosh, no, no-one owns the tree.....I wouldn't dream of taking from someone else's tree (unless I had permission)! I'm not a fan of jam but I may try the berries for some wine...... Not sure if any flower works.....I would only use tried and tested recipes for fear of toxicity.... :-)
