    Not a health inspector, but there was a Domino's pizza near me that had temporarily been staffed by people who didn't seem to give a shit about keeping things clean. We didn't know how bad it was until we got home, opened up the box, and found houseflies and mosquitoes baked into the cheese. That shop somehow managed to stay in business long enough to get a new set of workers who followed health codes.

    Requiring gloves in food prep can actually make things less hygienic because people are more likely to wash their hands when changing from task to task but less likely to change their gloves because gloves give them a fake sense of 'cleanliness' as well as being very tedious to remove and replace constantly. I believe they've actually done studies on it.

      I can second that. Worked in a grocery store behind the open cheese stand. The moment we were forced to use gloves, I used a box a day, but some people forgot to even change the gloves, not to mention, actually wash their hands. Guess what happens when you insert blue mold and white mold into regular cheese just by touching it? Yhea, pretty much what you would think. The whole damn counter had to be cleaned out twice a week just to avoid the mold. They still have not done away with it 5 years later, despite losing 40-50 kilos in sales, compared to 1 to 20 grams before.

      @@thedarkdragon1437 Exactly that. The issue is most people are all 'Ew, they're not wearing gloves touching my food!' so employers just keep it up to make people feel good, instead of actually having a sanitary situation and having to explain that to people.

      You're totally right but bare hands should still never touch food product.
      Definitely not finished product.
      I remember a commercial once of bare hands pressing a hamburger bun down gently and it was the most aggressive form of blatant violence I've ever seen.

      At my place of work, I'm the guy who uses the most gloves and washes my hands the most. If I touch anything gross (glove or gloveless) I'm washing my hands. I have to get on my coworkers, even bosses to wash properly. Unfortunately it's not common knowledge when to change gloves/wash hands, for most people.

    I used to be a delivery driver for pepsi. I have seen some stuff. Meat thawing under the sink at Mexican place was my favorite.

    I used to deliver to food places around the UK. I refuse to eat at chinese and Indian places unless I can see the food being prepared. I stood on a rat at a warehouse in Luton once whilst waiting for my load to be signed off.

    For going to snack bars: Don't eat anything not sealed in the manufacturer's packaging (like candy or ice cream bars). Unsold hamburgers are put into the ice cream server overnight. They go under the warming lamps to be thawed and sold the next day. Spilled popcorn is swept up and put back into the pre-popped corn bulk bag. Where I worked, we only had cold water and no time to wash our hands between cleaning tables, assembling sandwiches and handling cash.

    A restaurant in my old neighborhood got shut down over employees being caught cutting meat on the floor. There were also rumors that they were using cheap dog food to make the ground beef go further, but I dunno if that one was actually true or not.

    I have 2. At a plumbing/building supplies store, they had a soda machine. Because it was free, I would get some every day. One day a large chunk of mold fell into my water. I told everyone about it. Nothing was done. After I got sick of nothing happening, I took one of the nozzles off and took it to the main boss and showed him that the fuzzy camouflage colored thing was supposed to be smooth and white. I don't know if it was cleaned because I got fired. Second story. At a fast food place, they had a corporate person come and do an inspection. After he left and I was doing the closing stuff, I noticed that the fridge shelves didn't have pealing paint, but it was mold. The managers were in a panic and cleaned all the shelves and walls in the building.

    I'm not a health inspector but I used to work at a cheese store. (Yes I'm from Wisconsin) And what they were most well known for were cheese curds. And The Thing about cheese curds is that the best thing about them is the fact that they are squeaky when not refrigerated. As soon as they're refrigerated something In the cheese curd changes and changes its structure. Now legally, you have to refrigerate cheese. But cheese curds are in a Gray area. So we were actually allowed to keep cheese curds out of refrigeration for 1 day. Because they were made in the morning. Afterwards, they would have to go back into the cooler. To a person who's never had cheese curse before, that sounds kind of ridiculous that we wouldn't refrigerate them, but that's what keeps them is so good. In our house, we would actually just leave cheese curtains out for about a week before we threw them away. Also is a side note. Cheese doesn't go bad, it just molds. Most of the time, you just cut off the mold and the cheese will be fine. Obviously, we couldn't sell moldy cheese but the amount of cheese. I would bring home after just cutting off. The Moldy part was crazy. Sometimes I miss working at that cheese store.

    For the one with the clogged drains, it's a good reminder to everyone not to dump hot grease down the pipes. It eventually hardens when it cools and will clog the pipes. They do have sewer cameras, and it's easy to find the source of the problem, so they know who to bill to fix it.
    Also, don't dump anything down any pipe or drain that your not supposed to. Storm drain pipes spill directly into streams, lakes, oceans and rivers.
    Sanitary pipes flow to treatment facilities that primarily use good bacteria to eat up the poop and they take the settled material and make compost. Once the bacteria has done it's thing, they use uv to do a final treatment before dumping it back into the local streams, lakes, oceans and rivers (I maybe skipping a few steps because I went into a different field and that was years ago). Unless you have a septic system and then, you likely already know more about what to do and not do. When I was in college touring a waste water treatment plant, they said they'd had a issue a few years back where a company was flushing large amounts of bleach once a month and wiping out all the good bacteria, they eventually found the business doing it, but still it caused use problems.

    My husband got a job in the kitchen of a castle turned hotel with restaurant. He was supposed to be on test trial for a month at first but he was done in week 2. The cleaning crew didn't clean. There were mold and cobwebs all around and he spent that first week constantly scared of accidently giving someone food poisoning if mold got into the food somehow. Two days into week 2, he told them he couldn't do it. He came home feeling sad because he had hopes this would have become his full time job when he first got it but he needed his sanity more than the job. He's in a good place now where there's not these types of issues, and I have a happy husband coming home everyday.

    I would love to hear the opposite of this too what restaurants basically go above and beyond in keeping things sanitary. I mean reviewers are one thing but health inspectors can see what goes on behind the scenes plus I like the occasional good story.

    3:21 - This is why, one time my BFF and I ran a dark kitchen, I tolerated his OCD-powered ability to perceive even the slightest fleck of dirt and fucking yell at me about it; because this is literally the only way to prevent situations like the ones described in this thread.

    Our town had a Chinese place that stopped paying taxes. They weren't open, so no one noticed that no one had been seen in the place. Town is small enough that nothing is secret for long. This is important as the story goes that the PD and city inspector got inside somehow. No one knows what was seen but the fire department did a controlled burn on the property.

    Not a health inspector, but my dad worked on most major commercial kitchen appliances (no microwaves) in restaurants around the city of New Orleans (Orleans, Jefferson, and nearby St. Tammany Parish. He readily repaired the items because that was his job and money. But he told me some of the famous restaurants he had planned to take us to would never receive one penny of his money because of all the bad stuff he saw (the worst I can remember is pouring half-eaten soup back into the tureen, basically any food left on a customer's plate got scraped back into the food bins to be re-served, and no, he never told me particular places -- we lived in Metairie and rarely ate in New Orleans proper because of this).

    Not a health inspector, but if I was I would’ve shut down the hotel me and my family stayed in and have the all the employees arrested for knowingly allowing the ton of violations (most of the involving sanitation).

    Ate at a Chinese buffet once. Woke up the next morning to bad V/D. Figured it was severe food poisoning from eating WAAAAAY too much the night before. Got to a point where I was getting weak from retching so much and losing a lot fluids. Went to the hospital for relief. Got a call a few days later from the hospital that I had tested positive for Norovirus. Have not been to that restaurant since. Had an aversion to soft chewy foods for a while, too.

    I have worked at a lot of restaurants and they've always been clean and good. Although my ex worked at a subway where they said nothing could go to waste, including if you dropped cheese on the floor just wash it off and put it on the sandwich.

    Never get candy from one of those old gumball machines. Mice know how to get into those things, eat the candy and pee and poop all over what they don't eat. Giving your kid a quarter for candy is giving them mouse crap candy. Yum. Never use a ketchup pump, anywhere. Flies get into the spout and lay eggs. If you are lucky, you just get eggs in your ketchup. Unlucky, you get larvae i.e. maggots. May be too small to see but they are there. Yum.

    Oh my God, I've worked in so many food places that just alone this scares me and pisses me off at the same time. Just the shit that I'm hearing is astronomical. I worked at Waffle House and if there's anything I can tell you is that Waffle House of all places almost always has an A because the district manager is constantly on top. And I've known several district managers. When I've been a cook anywhere I don't let anything fly. You change your gloves, you wash your hands, you do not use The same knife between meats. Doesn't matter what mean it is It gets its own knife and each time you have to swap between meats switch your gloves.
    It's uncalled for to hear people not knowing basic food safety shit. If you're going to own a restaurant you need to know how to store meats, you need to know what is and isn't okay to store in the freezer. Can you freeze beef? Yes. If it's fresh beef and it's never been frozen you can freeze it properly. However, if you decide to pre-cook stuff it better be for the next day and it better be something that needs to simmer for 12 hours. Lot of times you can't cook that kind of stuff.
